Banana Cheesecake Bars

Banana Cheesecake Bars are my favorite way to use up ripe bananas when I want something a little richer than banana bread. They’ve got a buttery graham cracker crust and a creamy cheesecake layer that tastes like real banana, not banana flavoring.

The texture is what sells it for me: thick and smooth, with just enough tang from sour cream and lemon to keep it from feeling flat. And because they’re bars, they’re easy to slice and serve for gatherings or a weekend dessert.

I usually serve these fully chilled, sometimes with a little caramel drizzle on top. They’re especially good when you want a make-ahead dessert that still feels a little special.

Why You’ll Love This Recipe

Real banana flavor: Using ripe mashed bananas gives you an actual banana taste in the cheesecake, not a hint of it.

Easy to slice: A 9×13 pan makes neat, snackable bars that are simple to portion for a party or dessert table.

Make-ahead friendly: These need chill time anyway, so it’s the kind of dessert I like to prep the day before.

Classic crust: The graham cracker crust is buttery and sturdy, so you get a clean bite with the creamy filling.

Optional toppings: Keep it plain, or add banana slices, caramel, and whipped cream when you want it to look a little dressed up.

Ingredients You’ll Need

Crust

  • Graham cracker crumbs: I use regular boxed graham crumbs, but you can crush your own too. Either way, press them down firmly so the crust holds together.
  • Unsalted butter: Melted butter is what binds the crust and keeps it from turning dry. Unsalted lets you control the salt level.
  • Granulated sugar: Just enough to sweeten the crust and help it bake up a little more set.

  • Ground cinnamon (optional): I like a small pinch here because it works really well with banana. You can skip it if you want a plain graham crust.
  • Salt: Don’t skip it. Even a little salt makes the crust taste more like graham crackers and less like plain crumbs.

Cheesecake Filling

  • Cream cheese: Full-fat works best here, and it needs to be softened or it won’t beat smooth. I usually set it out at room temp so it doesn’t stay lumpy.
  • Granulated sugar: This sweetens the filling and keeps it tasting clean and classic.
  • Ripe bananas: The riper the better for this recipe. Very ripe bananas mash smoother and give a stronger banana flavor.
  • Sour cream: Adds a little tang and keeps the cheesecake texture creamy instead of stiff. Full-fat is my preference.
  • Eggs: Room temperature eggs mix in more evenly, and it helps keep the batter from getting overmixed.

  • Vanilla extract: Vanilla makes the banana flavor taste more “finished.” I use regular pure vanilla extract.
  • All-purpose flour: Just a little bit helps the bars set up nicely so they slice clean.
  • Lemon juice: This brightens the banana and cheesecake flavor. It also helps keep the filling from tasting too sweet.
  • Salt: A small amount makes the filling taste balanced, especially with all the dairy.

Optional Topping

  • Banana slices: Pretty for serving, especially if you’re putting these out on a platter. I add them right before serving so they don’t brown.
  • Caramel sauce: A quick drizzle is really good with banana cheesecake. Store-bought caramel works fine.
  • Whipped cream: Not required, but it’s nice if you’re serving these as a plated dessert.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 325°F. Line a 9×13-inch pan with parchment paper, leaving an overhang on the sides, then lightly grease it.
  2. Mix the crust: Stir together the graham cracker crumbs, melted butter, sugar, salt, and cinnamon (if using) until the crumbs are evenly moistened.
  3. Bake the crust: Press the crust mixture firmly into an even layer in the prepared pan. Bake for 10 minutes, then let it cool for about 5 minutes.
  4. Beat the cream cheese: Beat the softened cream cheese and sugar until smooth and lump-free.
  5. Add the filling ingredients: Mix in the mashed bananas, sour cream, lemon juice, vanilla, flour, and salt just until combined.
  6. Add the eggs: Add the eggs one at a time, mixing on low just until each one is incorporated.
  7. Bake: Pour the filling over the warm crust and smooth the top. Bake for 30 to 35 minutes, until the edges are set and the center is still slightly wobbly.

  8. Cool and chill: Let the pan cool at room temperature for 1 hour. Refrigerate until fully chilled, at least 3 hours.
  9. Slice and serve: Lift the bars out using the parchment overhang. Slice into bars with a clean warm knife, then garnish with banana slices and caramel (if using) and serve chilled.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use very ripe bananas. If they’re speckled and soft, that’s what you want. The banana flavor comes through a lot more, and they mash smoother too.

Don’t overmix after the eggs go in. Mix on low and stop as soon as the eggs disappear into the batter. Overmixing is one of the easiest ways to end up with cracks.

Watch the jiggle, not the clock. Bake times can vary, so focus on the edges being set and the center still having a slight wobble. It will firm up as it cools and chills.

Chill longer for cleaner slices. These cut best when they’re cold all the way through. If you have time, chilling overnight makes a big difference.

Parchment overhang is worth it. It makes it much easier to lift the whole slab out and slice neatly, especially with a creamy filling like this.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Caramel drizzle: A thin drizzle of caramel sauce is really nice with the banana flavor. I do it right before serving so it stays pretty.
  • Whipped cream: Add a small dollop on each bar if you’re serving these as dessert after dinner. It makes them feel a little more like cheesecake slices.
  • Fresh berries: Strawberries or raspberries on the side are good if you want something fresh on the plate. It’s a simple way to break up the richness.
  • Cold coffee: I like these with iced coffee or cold brew. The slightly bitter coffee goes well with the sweet graham crust.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. I keep them right in the pan with foil over the top, or in a sealed container once sliced.

You can make this recipe ahead pretty easily since it needs time to chill anyway. I actually prefer making it the day before so the bars are fully set when it’s time to slice.

If you want them to last longer, you can freeze individual portions once the bars are chilled and sliced. Thaw in the fridge overnight before serving.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use vanilla wafer crumbs instead of graham crackers?

Yes. Vanilla wafer crumbs work really well with banana, and the crust tastes a little more like banana pudding. Use the same method, and press it in firmly so it bakes up sturdy.

How ripe should the bananas be?

Very ripe is best, with lots of brown spots. Slightly green or just-yellow bananas don’t bring much flavor, and the filling can taste more like plain cheesecake.

How do I know when the cheesecake bars are done?

Look for set edges and a center that still has a small wobble when you gently shake the pan. If the whole pan looks liquid, it needs more time; if the center is totally firm, it may be a little overbaked.

Why did my cheesecake crack?

Most cracks come from overmixing after adding the eggs, or baking a little too long. The good news is bars hide cracks well once they’re sliced, especially with a caramel drizzle or whipped cream on top.

Can I freeze banana cheesecake bars?

You can. I like freezing them sliced, so I can thaw only what I need. The texture stays pretty creamy after thawing, but skip fresh banana garnish until right before serving.
