Cheesecake Parfait Cake

This Cheesecake Parfait Cake is a layered no-bake-style cheesecake with a buttery graham crust and a thick blanket of berries in the middle. It slices like a soft cheesecake, but it eats more like a parfait, which I really like when I want dessert to feel a little lighter.

The filling is fluffy and creamy (more mousse-like than dense), with a little vanilla and a small hit of lemon to keep it from tasting flat. Strawberry and blueberry is my default here because it’s classic and easy, and the color looks great on the table.

I make this when I want a make-ahead dessert that still feels special, especially for spring and summer dinners. It’s also one of those recipes that’s easy to serve cleanly once it’s chilled, which matters to me when I’m feeding a group.

Why You’ll Love This Recipe

Make-ahead friendly: Once it’s chilled, it’s ready when you are, and the slices come out neat and easy.

Fluffy filling: Folding in whipped cream keeps the cheesecake layer light, soft, and not overly heavy.

Berry layers: The fruit breaks up the richness and gives you that parfait feel in a real slice of cake.

Easy to customize: Swap the berries for whatever looks best, or add a thin layer of jam for a little extra fruit flavor.

Simple to serve: A springform pan makes it straightforward to unmold, top, and slice without a mess.

Ingredients You’ll Need

Graham Cracker Crust

  • Graham cracker crumbs: I use plain graham crumbs here. If you’re crushing your own crackers, go for a fine crumb so the crust presses in firmly.
  • Unsalted butter: Melted butter is what holds the crust together. Unsalted lets you control the salt level, but salted butter works if that’s what you have.
  • Granulated sugar: Just a little helps the crust taste like a real cheesecake base and not like dry crumbs.
  • Salt: Don’t skip it. Even a small pinch keeps the crust from tasting flat.

Cheesecake Filling

  • Cream cheese: Use full-fat cream cheese for the best texture, and make sure it’s truly room temperature so it beats smooth.
  • Powdered sugar: This dissolves easily and keeps the filling silky. If yours is lumpy, sift it quickly.
  • Vanilla extract: Regular vanilla is perfect here. It’s the main flavor behind the cream cheese.
  • Lemon juice: A little bit brightens everything up and makes the berries taste more “berry.” Fresh or bottled both work.
  • Heavy cream: Cold heavy cream whips up quickly and gives the filling that light, mousse-like feel.

Parfait Layers

  • Strawberries: Fresh is best here. I slice them fairly thin so the layer sits flat and the cake slices cleanly.
  • Blueberries: Blueberries are easy because there’s no prep besides a quick rinse and dry. Pat them dry so you don’t add extra water to the layers.

  • Berry jam or preserves (optional): This is nice if your berries aren’t super sweet, or if you want a slightly more “parfait” feel. I just dot it in lightly so it doesn’t turn into a slippery layer.

Topping

  • Whipped cream or whipped topping: Either one is fine. I like real whipped cream when I have time, but whipped topping is quick and stable.
  • Fresh berries: A handful on top makes it look finished with almost no effort. Use whatever mix you have.
  • Mint leaves (optional): Totally optional, but a little mint looks nice if you’re serving this for guests.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F. Line the bottom of a 9-inch springform pan for easier release.
  2. Mix the crust: Stir the graham cracker crumbs, melted butter, sugar, and a pinch of salt until the crumbs are evenly moistened.
  3. Press the crust: Press the mixture firmly into the bottom of the pan in an even layer, using the bottom of a measuring cup if needed.

  4. Bake: Bake for about 10 minutes, just until lightly set. Cool completely before adding the filling.
  5. Whip the cream: Whip the cold heavy cream to stiff peaks, then refrigerate it while you mix the cream cheese.
  6. Beat the cream cheese: Beat the softened cream cheese with powdered sugar, vanilla, and lemon juice until smooth and creamy.
  7. Fold the whipped cream: Fold the whipped cream into the cream cheese mixture gently until light and fluffy, stopping as soon as it’s combined.
  8. Spread the first layer: Spread half of the cheesecake filling over the cooled crust and smooth it out.
  9. Add the berries: Add an even layer of strawberries and blueberries. Dot with a little jam or preserves if you’re using it.
  10. Finish the layers: Spread the remaining filling over the berries and smooth the top.

  11. Chill: Cover and refrigerate until firm, at least 4 hours or overnight if you want very clean slices.
  12. Top and serve: Add whipped cream and more berries on top, garnish with mint if you want, then slice and serve.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use room temperature cream cheese. If it’s still cool in the middle, you’ll fight little lumps no matter how long you beat it. I usually set it out early so it softens evenly.

Whip the cream to stiff peaks. You want it thick enough to hold its shape so the filling sets up nicely. If it’s only at soft peaks, the cheesecake layer can end up looser.

Make sure the crust is fully cool. If the pan and crust are still warm, the filling can soften and get greasy right where it meets the crust.

Dry the berries well. A little water clinging to berries can make the middle layer watery. I rinse, then spread them on a towel for a few minutes.

Wipe the knife between cuts. A clean knife makes a big difference on a layered dessert like this. I keep a damp paper towel nearby and do a quick wipe every slice or two.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Extra berries: Serve a small bowl of sliced strawberries and blueberries on the side so people can add more fruit. This is especially nice if your top garnish is light.
  • Fruit sauce: A spoonful of warmed berry jam (thinned with a tiny splash of water) is an easy drizzle. It looks pretty and adds more fruit flavor.
  • Coffee or espresso: This is really good with coffee, especially if you like dessert that’s creamy and not chocolate-heavy. I usually go for black coffee or an iced latte.
  • Lemon: Add a few thin lemon slices on the serving platter, or a little extra lemon zest over the whipped cream. It keeps the whole thing tasting bright.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. I keep it right in the springform pan, or move slices to an airtight container if the pan is needed for something else.

You can make this recipe ahead the day before and let it chill overnight. It slices cleaner the next day, and the layers hold their shape better.

If you want it longer than a few days, you can freeze individual portions. Wrap slices well, then thaw in the fridge overnight before serving; the texture may be a little softer, but it still tastes good.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Is this actually no-bake?

The filling is no-bake, but the graham crust gets a quick bake so it sets firmly and slices clean. If you really need to skip the oven, you can chill a pressed-in crust instead, but it will be a little more crumbly when you cut.

Can I use frozen berries?

You can, but I don’t love it for the middle layer because frozen berries release a lot of juice as they thaw. If you use them, thaw first, drain well, and pat dry so the filling doesn’t get watery.

Can I use whipped topping instead of heavy cream?

Yes. Swap in whipped topping for the whipped cream portion if you want the fastest prep and a very stable filling. The texture is slightly different, but it still sets up nicely.

How long does it need to chill before slicing?

I’d plan on at least 4 hours. Overnight is even better if you want very clean layers and firm slices.

Can I swap the berries for other fruit?

Definitely. Cherries, peaches, and mango all work well here. Just keep an eye on how juicy the fruit is, and slice it thin so the layers stay even.
