Chewy Brownie Blondies

Chewy Brownie Blondies are my kind of bar cookie when I can’t decide between a brownie and a blondie. They’re chewy and fudgy, with a crackly top and plenty of chocolate in every square.

I like this version because it stays soft in the middle and sets up with those slightly firmer edges that make slicing easy. The cocoa gives it a deep chocolate flavor, and the chocolate chips make the texture a little more interesting than a plain brownie bar.

For me, these are especially good on a cookie tray or cut into small squares for a holiday platter. They’re also one of my favorite simple weekend bakes when I want something chocolatey that doesn’t need frosting.

Why You’ll Love This Recipe

Soft and Chewy: These stay dense and chewy in the center, with edges that hold their shape when you slice.

Deep Chocolate Flavor: Cocoa powder does a lot of work here, so you get a rich brownie feel without needing melted chocolate.

That Crackly Top: The glossy batter bakes up with a thin, papery top that looks like a classic brownie.

One-Bowl Friendly: It’s straightforward and not fussy, which is exactly what I want from an 8×8 pan dessert.

Easy to Customize: Keep it simple with chips only, add walnuts for crunch, or swap in chunks for bigger pockets of chocolate.

Ingredients You’ll Need

Pan and dry

  • Unsalted butter: This is just for greasing the pan so the corners don’t stick. I still line with parchment because it makes lifting the bars out so much easier.
  • All-purpose flour: I use regular flour here. Measure it lightly so the bars don’t turn cakey.
  • Unsweetened cocoa powder: Dutch-process cocoa is my favorite for a darker, smoother chocolate flavor, but natural cocoa works too.
  • Baking powder: Just enough to help the edges set while the middle stays chewy.

  • Fine salt: Don’t skip it. It keeps the chocolate from tasting flat and helps the sweetness taste more balanced.

Batter and mix ins

  • Unsalted butter: Melted butter is what gives these that dense, chewy texture. Let it cool slightly so it doesn’t scramble the eggs.
  • Light brown sugar: Brown sugar helps with chewiness and gives a little caramel note. Dark brown sugar works too if that’s what you have.
  • Granulated sugar: This helps with that shiny batter and the crackly top. I wouldn’t cut it back too much or you’ll lose some of that brownie-like finish.
  • Eggs: Room temperature is best so they mix in smoothly. Cold eggs can make the batter look a little broken.
  • Vanilla extract: It’s not a vanilla-forward bar, but vanilla makes the chocolate taste more rounded.
  • Semi-sweet chocolate chips: Semi-sweet is my go-to here. Milk chocolate chips are fine if you like a sweeter bar.

  • Walnuts (optional): I like walnuts for a little crunch, especially if you’re serving these with coffee. You can leave them out or swap in pecans.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F. Grease an 8-inch square pan, then line it with parchment paper, leaving some overhang on two sides.
  2. Mix the dry ingredients: In a medium bowl, whisk the flour, cocoa powder, baking powder, and salt until evenly combined.
  3. Mix the butter and sugars: In a large bowl, whisk the melted butter, brown sugar, and granulated sugar until the mixture looks glossy and smooth.
  4. Add the eggs and vanilla: Whisk in the eggs until fully combined, then whisk in the vanilla extract.
  5. Add the dry ingredients: Fold the dry ingredients into the wet ingredients just until you don’t see any dry streaks.
  6. Fold in the mix-ins: Fold in the chocolate chips and the walnuts, if using.

  7. Bake: Spread the batter evenly in the prepared pan. Bake for 22 to 28 minutes, until the edges are set and a toothpick comes out with moist crumbs.
  8. Cool and slice: Cool completely in the pan. Use the parchment overhang to lift the bars out, then slice into 12 pieces.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use Dutch-process cocoa if you have it. It gives a deeper color and a smoother chocolate flavor. It’s what I reach for when I want these to taste extra “brownie.”

Let the melted butter cool a bit. Warm is fine, hot is not. If it’s too hot, it can mess with how the eggs mix in and the batter won’t look as smooth.

Stop mixing as soon as the flour disappears. Overmixing pushes these toward cakey. I fold just until the last streaks of cocoa are gone.

Don’t overbake them. Pull the pan when the edges look set and the middle still looks a little soft. They finish setting up as they cool.

Cool fully before slicing. If you cut too soon, the center can stick to the knife and look messy. Once they’re cool, you get cleaner squares and better chew.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is classic with these. It’s especially nice if you add walnuts for a little extra richness.
  • Coffee or espresso: These are really good with black coffee or a latte. I like them most as an afternoon treat.
  • Ice cream: Serve a square with vanilla ice cream on the side if you want to turn it into a full dessert plate. A little chocolate sauce doesn’t hurt.
  • Fresh berries: Raspberries or strawberries are nice alongside a rich bar like this. Keep it simple and just add a handful to the plate.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers airtight for up to 4 days. I usually keep them at room temperature if the kitchen is cool, but the fridge is fine too if you prefer a firmer bar.

If you refrigerate them, let a square sit out for 10 to 15 minutes before serving so the texture softens a bit. You can also warm one briefly in the microwave if you want the chips a little melty.

If you want them to last longer, freeze individual portions or freeze the whole slab wrapped well. Thaw in the fridge overnight or on the counter for a couple of hours.

Recipe FAQs

Are these more like brownies or blondies?

They eat more like chewy brownies, but the method and texture remind me of blondies (especially the crackly top and the way the bars slice). I think of them as a brownie-blondie mashup with chocolate chips.

Can I use natural cocoa powder instead of Dutch-process?

Yes. Dutch-process gives a deeper, smoother chocolate flavor, but natural unsweetened cocoa works fine and still tastes very chocolatey.

How do I know when they’re done?

Look for set edges and a center that no longer looks wet. A toothpick should come out with moist crumbs, not clean and not with raw batter.

Can I skip the walnuts?

Definitely. The walnuts are optional, and the bars are great without them. If you want a different crunch, chopped pecans work well too.

Can I add espresso powder?

Yes, and it’s a nice trick if you like a deeper cocoa flavor. Add about 1 tablespoon to the dry ingredients and whisk it in so it’s evenly mixed.
