Chocolate Cream Poke Bars

Chocolate Cream Poke Bars are my go-to when I want a rich chocolate dessert that still slices clean and serves easily. They’re basically cake bars with a soft, soaked middle and a cool, creamy top.

I like this version because the condensed milk and fudge sauce sink into the cake and keep it tender, then the chocolate pudding layer adds that classic boxed-dessert comfort. The whipped topping on top makes it feel light enough to go back for “just a small piece.”

For me, these are best served cold from the fridge, especially for potlucks, holidays, and any night you want a no-fuss chocolate pan dessert. They also hold up well on a dessert table, which I appreciate.

Why You’ll Love This Recipe

So Chocolatey: You get chocolate cake, a fudgy soak, and a creamy chocolate layer all in one bar. It’s the kind of dessert that actually satisfies a chocolate craving.

Make-Ahead Friendly: These are better after a good chill, so you’re not rushing to serve them right away. I like having dessert already done and waiting in the fridge.

Easy to Slice and Serve: It’s a simple 9×13 pan situation, and you can cut small or large bars depending on the crowd. They’re neat enough for parties but casual enough for home.

Reliable with a Box Mix: Devil’s food cake mix keeps the base consistent, and it bakes up sturdy enough to hold all the layers. It’s one of those recipes that’s hard to mess up.

Flexible Toppings: Mini chips and shavings are easy, but you can keep it simple or dress it up depending on what you have. A pinch of salt on top is also really nice if you like that sweet-salty thing.

Ingredients You’ll Need

Chocolate Cake Base

  • Devil’s food cake mix: I like devil’s food here because it tastes deeper and more “grown-up” than plain chocolate cake mix, but any boxed chocolate mix will work.
  • Eggs: These give the cake structure so it can handle the poke filling without falling apart.
  • Water: Just regular water is fine. If you want to experiment, coffee works too, but I keep it simple most of the time.

  • Vegetable oil: Oil keeps the cake soft even after chilling, which is exactly what you want for bars.
  • Nonstick spray: Don’t skip it. These are sticky bars once the sauce sinks in, so a well-sprayed pan saves a lot of frustration.

Poke Filling

  • Sweetened condensed milk: This is what makes the middle so creamy and moist. Use the sweetened kind, not evaporated milk.
  • Chocolate fudge sauce: Jarred fudge sauce works great here. I prefer a darker chocolate one when I have it.
  • Vanilla extract: It doesn’t make it taste like vanilla, it just rounds out the chocolate a bit. I still add it every time.

Chocolate Cream Layer

  • Instant chocolate pudding mix: Instant is the one you want here, not cook-and-serve. It sets up quickly and spreads easily.
  • Cold milk: Cold milk helps the pudding thicken fast. Whole milk gives the richest result, but 2% works too.

  • Whipped topping: This makes the pudding layer lighter and easier to spread. Thaw it first so it folds in smoothly.

Topping

  • Mini chocolate chips: Minis are nice because they sprinkle evenly and don’t make cutting messy.
  • Chocolate shavings: This is optional, but it makes the top look finished. I usually just use a vegetable peeler on a chocolate bar.
  • Salt: A tiny pinch on top is great if your fudge sauce is very sweet. I don’t always do it, but I’m glad when I do.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F. Spray a 9×13-inch pan well with nonstick spray.
  2. Mix the batter: In a large bowl, mix the cake mix, eggs, water, and oil until smooth and well combined.
  3. Bake: Pour the batter into the prepared pan and bake for about 23 to 28 minutes, until a toothpick comes out with a few moist crumbs.

  4. Cool: Let the cake cool in the pan for about 10 minutes.
  5. Poke the cake: Use the handle of a wooden spoon to poke holes all over the warm cake, going down into the cake so the filling has somewhere to go.
  6. Mix the filling: Whisk the sweetened condensed milk, chocolate fudge sauce, and vanilla extract until combined.
  7. Soak the cake: Slowly pour the filling over the cake, aiming for the holes and letting it sink in. Cool completely before adding the next layer.
  8. Make the pudding: Whisk the instant chocolate pudding mix with cold milk until thickened, about 2 minutes.
  9. Fold in whipped topping: Fold in half of the whipped topping until smooth and no streaks remain.
  10. Spread the chocolate cream: Spread the pudding mixture evenly over the cooled cake.

  11. Add the top layer: Spread the remaining whipped topping over the pudding layer.
  12. Chill: Sprinkle with mini chocolate chips, chocolate shavings, and a pinch of salt if using. Refrigerate for at least 2 hours or overnight, then slice into bars and serve cold.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Let the cake cool completely before the pudding layer. If the cake is still warm, the pudding softens and can get a little loose. I wait until the pan feels neutral to the touch.

Poke plenty of holes. This is one of those times where more is better. If the holes are too few or too shallow, the filling sits on top instead of soaking in.

Pour the filling slowly. It gives the sauce time to find the holes and sink in instead of pooling in one spot. I usually go back and forth across the pan.

Use cold milk for the pudding. Warm or even cool-ish milk takes longer to thicken and can leave you with a softer layer. Straight-from-the-fridge milk makes it set fast.

Warm your knife for cleaner slices. Run it under hot water, wipe it dry, and cut. Wipe between cuts if you want nice edges.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is simple and classic with these. I especially like it if you add that tiny pinch of salt on top.
  • Coffee or espresso: These are really good with coffee, hot or iced. Something not too sweet to drink is nice here.
  • Fresh berries: Strawberries or raspberries on the side make the plate look nicer and give you a break from all the chocolate. I don’t bother slicing them fancy.
  • Extra drizzle: A little extra fudge sauce over each bar is great if you’re serving them as a plated dessert. It’s also an easy way to cover any messy cuts.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. These are meant to be served cold, so you can pull them straight from the fridge and slice as needed.

You can make this recipe ahead the day before and let it chill overnight. The bars set up firmer that way, and the slices come out cleaner.

If you want them to last longer, you can freeze individual portions in an airtight container. Thaw in the fridge overnight before serving so the topping doesn’t get watery.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use a different cake mix?

Yes. Any boxed chocolate cake mix works here, including chocolate fudge or dark chocolate. Devil’s food is my favorite because it tastes a little deeper with the condensed milk soak.

Do I have to use instant pudding?

For this recipe, yes, instant pudding is the easiest and most reliable. Cook-and-serve pudding needs to be cooked and cooled first, and it usually sets up differently once you fold in whipped topping.

Can I swap the fudge sauce for caramel?

You can. Caramel sauce with the condensed milk makes a really good caramel-chocolate version, especially if you still keep the chocolate pudding layer on top.

Why did my pudding layer turn out soft?

The most common reason is using milk that isn’t cold enough, or not whisking long enough for it to thicken before folding in the whipped topping. It can also happen if the cake wasn’t fully cooled before you spread it on.

Can I use homemade whipped cream instead of whipped topping?

Yes, and it’s good. Just keep in mind homemade whipped cream is softer, so the top layer won’t hold quite as firmly and the bars may not slice as neatly.
