Coconut Cheesecake Pie

Coconut Cheesecake Pie is the kind of dessert I make when I want something cold and creamy but still a little special. It’s basically a cheesecake filling in a buttery graham cracker crust, finished with toasted coconut on top.

The flavor is rich and coconut-forward, with that classic tang from cream cheese and sour cream. I like this version because the filling sets up nicely and slices clean, but it still has that soft, fluffy feel from the whipped cream folded in.

This is one of my favorite make-ahead desserts for weekends, holidays, and potlucks. I usually serve it straight from the fridge with a little extra whipped cream and maybe some fresh berries on the side.

Why You’ll Love This Recipe

Make-ahead friendly: This pie is better after a good chill, so it’s easy to make the day before and forget about until dessert time.

Classic coconut flavor: Between the coconut in the crust, the filling, and the topping, it really delivers that coconut taste without needing anything fancy.

Easy filling: The filling is just a few bowls and a mixer. No water bath, no worrying about cracks, no fuss.

Great texture: It’s thick and creamy like cheesecake, but a little lighter and fluffier from the whipped cream.

Pretty finish: Toasted coconut on top makes it look like you did more work than you actually did.

Ingredients You’ll Need

Crust

  • Graham cracker crumbs: I use the plain crumbs (either crushed at home or the boxed kind). They make a sturdy, familiar crust that works really well with coconut.
  • Unsweetened shredded coconut: I like unsweetened in the crust since the filling is already sweet. It adds texture and a toasty coconut edge.
  • Unsalted butter: Melted butter is what holds the crust together. Unsalted gives you more control, and you can add just a pinch of salt.
  • Granulated sugar: Just enough to help the crust brown and taste a little more like a dessert crust.
  • Salt: Don’t skip it. A small pinch keeps the crust from tasting flat.

Filling

  • Cream cheese: Full-fat is the move here. It sets better and gives you that real cheesecake texture.

  • Sweetened condensed milk: This sweetens and thickens the filling at the same time. It’s also what keeps this recipe simple.
  • Sour cream: Adds tang and keeps the filling from tasting too heavy. I stick with full-fat.
  • Sweetened shredded coconut: This gives the filling that classic coconut chew. If you only have unsweetened, it still works, just a little less sweet.
  • Lemon juice: A little acidity makes the cream cheese taste brighter. Fresh is great, bottled is fine.
  • Vanilla extract: Vanilla rounds everything out and makes the filling taste more “cheesecake” than just sweet.
  • Coconut extract (optional): Helpful if you want a stronger coconut flavor. I use it when I want the coconut to really come through.
  • Heavy whipping cream: This gets whipped and folded in so the filling is lighter and not overly dense.

  • Powdered sugar: Just to lightly sweeten the whipped cream and help it hold.

Topping

  • Sweetened shredded coconut: Toasting it is worth the extra few minutes. It adds crunch and a deeper coconut flavor.
  • Whipped cream (optional): I like a small dollop on each slice, especially if you’re serving this after a big meal.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F and lightly grease a 9-inch pie dish.
  2. Mix the crust: In a bowl, mix the graham cracker crumbs, shredded coconut, melted butter, sugar, and salt until everything is evenly moistened.
  3. Press the crust: Press the crumb mixture firmly into the bottom and up the sides of the pie dish. Use the bottom of a measuring cup if you want to pack it in tightly.
  4. Bake the crust: Bake for 8 to 10 minutes, until lightly golden. Let the crust cool completely.

  5. Beat the cream cheese: Beat the softened cream cheese until smooth and creamy.
  6. Add the condensed milk: Mix in the sweetened condensed milk until fully combined and smooth.
  7. Mix in the rest: Add the sour cream, shredded coconut, lemon juice, vanilla extract, and coconut extract (if using). Mix until smooth.
  8. Whip the cream: In a separate bowl, whip the heavy cream with the powdered sugar to stiff peaks.
  9. Fold the filling: Fold the whipped cream into the cream cheese mixture until no streaks remain.
  10. Fill the crust: Spread the filling into the cooled crust and smooth the top.
  11. Chill: Cover and refrigerate for at least 4 hours or overnight, until set.

  12. Toast the coconut: Toast the shredded coconut in a dry skillet over medium heat, stirring often, until golden. Let it cool.
  13. Finish and slice: Top the pie with toasted coconut, then slice with a clean, sharp knife (wipe the knife between slices for neat cuts).

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use truly softened cream cheese. If it’s still cool in the center, you’ll end up chasing little lumps around the bowl. I like to let it sit out until it feels completely soft when you press it.

Let the crust cool all the way. A warm crust can make the filling loosen up and get a little oily at the edges. Room temp is fine, just don’t rush it.

Whip the cream to stiff peaks. You want it to hold its shape so the filling sets up thick. If it’s only at soft peaks, the pie can end up a bit slack.

Fold gently, but don’t leave streaks. I usually switch to a spatula and take my time. A few extra folds is better than pockets of whipped cream.

Toast the coconut slowly. It goes from golden to burnt fast. Medium heat and constant stirring is the easiest way to keep it even.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Whipped cream: A dollop on each slice keeps it simple and classic. If you want, add a little extra toasted coconut on top too.
  • Fresh berries: Strawberries, raspberries, or blueberries are nice next to a rich slice. I like them plain or with just a tiny sprinkle of sugar.
  • Chocolate drizzle: A thin drizzle of chocolate sauce over the top is really good with coconut. Don’t drown it—just a little is enough.
  • Coffee: This is great with a cup of coffee, especially after dinner. I usually go for something not too sweet.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the refrigerator for up to 4 days. I keep it right in the pie dish and just cover it well so the top doesn’t dry out.

You can make this recipe ahead the day before you need it. In fact, I prefer it after an overnight chill because it slices cleaner.

If you want to freeze it, freeze individual portions so you can grab one slice at a time. Thaw in the fridge overnight and add the toasted coconut after thawing so it stays crisp.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I make this as a no-bake coconut cheesecake pie?

Yes. Use a store-bought graham cracker crust (or press your crust into the dish and chill it well), then skip the baking step. The filling still sets up in the fridge.

Can I swap the graham crackers for something else?

Vanilla wafers are a great swap and make the crust a little sweeter. Just crush them into fine crumbs the same way you would with graham crackers.

Do I have to use coconut extract?

No. It’s optional, and the pie still tastes like coconut without it. I use it when I want a stronger coconut flavor, especially if I’m using coconut that isn’t very fragrant.

Why didn’t my pie set up firmly?

The most common issues are not chilling long enough or using low-fat cream cheese or sour cream. Also make sure the whipped cream is whipped to stiff peaks before you fold it in.

Can I add rum for a coconut rum flavor?

Yes. Stir in about 1 tablespoon of rum, or use 1 teaspoon of rum extract. I’d add it with the vanilla so it blends in evenly.
