Cookies and Cream Ice Cream Pie

Cookies and Cream Ice Cream Pie is my kind of frozen dessert: an Oreo cookie crust, a thick vanilla ice cream filling with cookie chunks, and a simple fudge swirl throughout.

I like this version because it’s rich and chocolatey but still clean and familiar, like a cookies-and-cream scoop in pie form. The crust is sturdy, the center slices well once it firms up, and the whipped topping keeps it feeling light on top.

For me, this is best for summer weekends, birthdays, and any time you want a dessert that can sit in the freezer until you’re ready. It’s also nice when you need something that looks finished with almost no fuss at serving time.

Why You’ll Love This Recipe

Make-ahead friendly: This is one of those desserts you can get done early and forget about until you’re ready to slice.

That Oreo crust: A baked Oreo crust holds up well under ice cream and gives you a solid, crunchy edge in every slice.

Fudge swirl: The hot fudge ribbon breaks up the sweetness and adds that soft, chocolatey bite when it’s slightly thawed.

Easy to dress up: Whipped topping, extra cookie crumbs, a little chocolate syrup—done. It looks nice with almost no effort.

No-bake option: If you don’t want to turn on the oven, you can chill the crust instead and still get a great result.

Ingredients You’ll Need

Oreo Crust

  • Oreo sandwich cookies: I use regular Oreos here (not Double Stuf) for a crust that isn’t overly soft. Crush them pretty fine so the crust presses in cleanly.
  • Unsalted butter: Melted butter is what makes the crumbs hold together and slice without falling apart. If you’re using salted butter, go lighter on the added salt.
  • Granulated sugar: Optional, but I like a little bit for a slightly crisper crust. If your Oreos are sweet enough for you, feel free to skip it.
  • Salt: Just a pinch makes the chocolate taste more like chocolate. Don’t skip it if you have it.

Ice Cream Filling

  • Vanilla ice cream: Vanilla gives you that classic cookies-and-cream flavor once the Oreos are folded in. A good, creamy brand helps it slice nicer.
  • Oreo sandwich cookies: I like these coarsely chopped so you get real cookie pieces instead of disappearing crumbs. Bigger chunks are great, just don’t make them huge.
  • Vanilla extract: Optional, but it bumps up the vanilla flavor if your ice cream is a little mild.

  • Hot fudge sauce: Jarred hot fudge works fine. Let it cool so it swirls instead of melting the ice cream into a mess.

Topping

  • Whipped topping or sweetened whipped cream: Either works. Whipped topping holds its shape longer, but homemade whipped cream tastes a little fresher.
  • Oreo sandwich cookies: A couple crushed on top adds crunch and makes the pie look finished. I keep them fairly chunky.
  • Chocolate syrup: Optional, but a quick drizzle is nice if you’re serving this for a party or birthday.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F.
  2. Mix the crust: Stir the finely crushed Oreos with the melted butter, sugar (if using), and a pinch of salt until everything looks evenly moistened.
  3. Press the crust: Press the mixture firmly into a 9-inch pie dish, across the bottom and up the sides. Use the bottom of a measuring cup to really pack it in.

  4. Bake: Bake for 8 to 10 minutes, until the crust looks set and smells fragrant.
  5. Cool: Let the crust cool completely to room temperature before filling.
  6. Soften the ice cream: Let the ice cream sit at room temperature for about 10 to 15 minutes, until it’s spreadable.
  7. Add the Oreos: Fold the chopped Oreos into the softened ice cream. Stir in the vanilla extract if you’re using it.
  8. Fill the crust: Spread half of the ice cream mixture into the cooled crust and smooth the top.
  9. Swirl the fudge: Drizzle half of the cooled fudge sauce over the ice cream and gently swirl it in.
  10. Add the rest: Add the remaining ice cream mixture and smooth the top, then drizzle the remaining fudge sauce over it and lightly swirl again.

  11. Freeze: Cover tightly and freeze until firm, at least 6 hours or overnight.
  12. Serve: Top with whipped topping and crushed Oreos, then drizzle with chocolate syrup if using. Let the pie stand about 5 minutes before slicing.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Cool the crust all the way. If the crust is still warm, it starts melting the ice cream immediately and the layers get messy.

Don’t over-soften the ice cream. You want it spreadable, not soupy. If it gets too soft, put the bowl in the freezer for a few minutes and try again.

Let the fudge sauce cool. Warm fudge will melt holes into the ice cream instead of giving you a nice swirl. Room temp or just slightly cool is easiest to work with.

Press the crust firmly. Really pack it into the pan, especially where the bottom meets the sides. That’s the spot that likes to crumble if it’s loose.

Use hot water for clean slices. Dip a knife in hot water, wipe it dry, and slice. Repeat between cuts if you want neat wedges.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Cold milk: A glass of milk is simple and classic with this. It’s especially nice if you go a little heavier on the fudge swirl.
  • Coffee: I like this with plain hot coffee or cold brew. The bitterness is good with all the chocolate and cookies.
  • Fresh berries: Strawberries or raspberries on the side are an easy way to add something fresh to the plate. No fancy prep needed.
  • Extra hot fudge: Warm a little fudge sauce and drizzle it over each slice right before serving. It’s a good move if the pie has been in the freezer for a couple days.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store the pie covered in the freezer. I like to press plastic wrap against the surface, then cover the whole dish again so it doesn’t pick up freezer smells.

You can make this recipe ahead and keep it frozen until you need it. I usually add the whipped topping and cookie crumbs right before serving so they look their best.

Freeze individual slices if you want easy grab-and-go portions. Wrap slices well so the edges don’t dry out.

If the pie is very firm, let it sit out a few minutes before cutting. It’s easier to get clean slices that way.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I make this as a no-bake Oreo crust?

Yes. Press the crust into the pie dish and chill it for about 30 minutes instead of baking. It won’t be quite as crisp, but it still holds together well once the pie is frozen.

Can I use cookies and cream ice cream instead of vanilla?

You can, and it’s great. If you do that, I’d reduce the extra chopped Oreos so it doesn’t get overly chunky (about half the amount is plenty).

How long should I let it sit before slicing?

About 5 minutes on the counter is usually enough. If it’s been in the freezer overnight and feels rock hard, give it a couple extra minutes and use a hot knife.

What’s the easiest way to get clean slices?

Use a big sharp knife dipped in hot water, then wipe it between cuts. It sounds fussy, but it makes a big difference with frozen pies.

Do I have to use hot fudge sauce?

No, it’s optional. The pie is still really good without it, and you can always drizzle chocolate syrup over the top when you serve.
