Double Chocolate Bars

Double Chocolate Bars are my go-to when I want a fudgy chocolate dessert that cuts into neat squares and still eats like a brownie. They’re deeply cocoa-forward, with melty chocolate chips throughout, and the edges get just a little chewy.

I like this version because the batter has both cocoa powder and melted chocolate, so the flavor is bold and the texture stays dense. They’re sweet, rich, and simple in the way the best chocolate bars are.

These are especially good for cookie trays, potlucks, and weekend baking when you want something you can slice and serve without fuss. For me, they’re also great with coffee or a cold glass of milk.

Why You’ll Love This Recipe

Fudgy centers: The middle stays dense and moist, especially if you pull them when the toothpick still has moist crumbs.

Double chocolate flavor: Cocoa in the batter plus melted semisweet chocolate gives these a deeper chocolate taste than bars made with cocoa alone.

Easy to slice and share: An 8-inch pan makes tidy squares that travel well for lunches, bake sales, and holiday platters.

No fussy frosting: The chocolate chips do the work here, so you still get that rich finish without needing a topping.

Flexible mix-ins: Keep them classic with chips only, or add walnuts for a little crunch and contrast.

Ingredients You’ll Need

Dry

  • All-purpose flour: I use regular flour here. It keeps the bars sturdy enough to slice, but still soft in the middle.
  • Unsweetened cocoa powder: This is where the main chocolate flavor comes from, so use one you like. Natural or Dutch-process both work in this recipe.
  • Baking powder: Just a little helps the edges set and gives the bars a touch of lift so they don’t feel heavy.
  • Fine salt: Don’t skip it. It keeps the chocolate flavor from tasting flat.

Wet

  • Unsalted butter: Butter gives these that classic brownie-bar richness. If you only have salted butter, just keep the added salt a little lighter.
  • Semisweet chocolate: I like semisweet here because it stays balanced with the sugars. Chop it so it melts quickly and evenly.

  • Granulated sugar: This sweetens and also helps give the bars that shiny, crackly top.
  • Light brown sugar: Brown sugar adds chew and a little deeper flavor. Dark brown sugar works too if that’s what you have.
  • Eggs: Eggs give structure and that dense, brownie-like bite. Use large eggs so the batter isn’t too dry.
  • Vanilla extract: Vanilla makes the chocolate taste more rounded. I use pure vanilla, but the regular grocery-store kind is totally fine.
  • Milk: A small splash keeps the batter smooth and helps the cocoa blend in nicely. Any milk you have is fine.

Mix-ins

  • Semisweet chocolate chips: These melt into little pockets as the bars bake. You can swap in chunks if you want bigger streaks of chocolate.
  • Walnuts (optional): I like the crunch, but they’re optional. Pecans work too, or leave nuts out entirely.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F. Line an 8-inch square pan with parchment paper, then lightly grease it.
  2. Mix the dry ingredients: Whisk the flour, cocoa powder, baking powder, and salt together until the color looks uniform, then set aside.
  3. Melt the chocolate: Melt the butter and chopped semisweet chocolate together until smooth. Let it cool for about 3 minutes so it doesn’t cook the eggs.
  4. Add the sugars: Whisk the granulated sugar and brown sugar into the chocolate mixture until glossy and well combined.
  5. Add the eggs: Whisk in the eggs one at a time, mixing well after each one. Whisk in the vanilla and milk.
  6. Add the dry ingredients: Fold the dry mixture into the wet mixture just until you don’t see dry streaks of flour or cocoa.
  7. Fold in the mix-ins: Fold in the chocolate chips and the walnuts, if you’re using them.

  8. Bake: Spread the batter evenly in the pan. Bake for 24 to 32 minutes, until the edges are set and a toothpick comes out with moist crumbs.
  9. Let cool: Cool in the pan for at least 45 minutes for cleaner cuts, then lift out using the parchment and slice into bars.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Don’t overbake them. Pull the pan when the edges look set and the center looks a little softer. A toothpick should come out with moist crumbs, not wet batter.

Let the melted chocolate cool a bit. Three minutes is usually enough. If it’s piping hot when you add the eggs, you can end up with little cooked egg bits in the batter.

Stop mixing as soon as the flour disappears. Overmixing makes the bars tougher and less fudgy. I fold just until I no longer see dry cocoa or flour.

Use parchment paper. It makes lifting the whole slab out of the pan easy, and you won’t have to fight the corners when it’s time to slice.

Underbake slightly for extra fudgy bars. If you like a denser center, aim for the lower end of the bake time and let them cool fully before cutting.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is simple and classic with these bars. It’s especially nice if you cut smaller squares since they’re pretty rich.
  • Coffee or espresso: These are really good with coffee, especially black coffee or a latte. I like them as an easy dessert after dinner.
  • Ice cream: Serve a bar with vanilla ice cream on the side if you want something a little more “dessert plate.” It’s also good with coffee ice cream.
  • Fresh berries: Strawberries or raspberries are nice alongside a square or two. It keeps the plate feeling a little lighter.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store the bars airtight at room temperature for up to 3 days. I keep them in a container with a tight lid so the centers stay soft. If your kitchen is warm, move them to the fridge.

If you refrigerate them, the bars will firm up quite a bit. Let a square sit out for 10 to 15 minutes before serving, or warm it briefly if you like a softer bite.

If you want them to last longer, freeze the bars for up to 2 months. I like to freeze individual squares so you can grab one at a time.

Thaw at room temperature for about 30 to 60 minutes, or thaw in the fridge overnight. They slice and handle best once they’re fully cooled and set.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

How do I know when double chocolate bars are done?

Look for set edges and a center that doesn’t look wet or shiny. A toothpick should come out with moist crumbs, not clean and not coated in raw batter.

Can I swap some of the chocolate chips for chunks or a different type?

Yes. I do this all the time—swap half the chips for dark chocolate chunks, or even white chocolate chips if you want a sweeter contrast.

Can I add espresso powder?

Definitely. Add about 1 teaspoon of espresso powder to the dry ingredients. It won’t make the bars taste like coffee, it just deepens the chocolate flavor.

Why do my bars crumble when I slice them?

This usually happens when they’re still warm. Let them cool in the pan for at least 45 minutes, and for the cleanest cuts, cool fully before slicing.

Do I have to use walnuts?

No. Leave them out for a smooth, super chocolatey bar, or swap in pecans if you like. If you’re serving these to a group, I often keep them nut-free.
