Grilled Citrus Chicken

Grilled Citrus Chicken is my go-to when I want chicken that’s juicy, bright, and a little sticky around the edges in the best way. The citrus and garlic come through right away, and the honey gives you that light caramelized finish on the grill.

I like this one because it tastes fresh and bold, not heavy. The marinade has that orange-lime snap, plus Dijon and soy for a deeper, more “finished” flavor than plain citrus alone. It’s especially good with either chicken thighs or breasts, depending on what you have.

For me, this is a great weeknight grilling recipe that still feels like real dinner. I usually serve it with rice, grilled veggies, or a simple salad, and I almost always throw a few citrus slices on the grill too.

Why You’ll Love This Recipe

Weeknight Friendly: The marinade is quick to whisk together, and the chicken cooks fast on a hot grill.

Bright Flavor: Orange, lime, and lemon make it taste fresh and zippy, especially with a little zest in the mix.

Great Grill Marks: The honey helps the chicken brown and get those lightly caramelized edges that make grilled chicken actually exciting.

Works with Breasts or Thighs: Use what you like. Thighs stay extra juicy, and breasts are lean and still tender with this marinade.

Easy to Serve: Slice it up for plates, salads, rice bowls, tacos, or wraps, and it still feels like the same meal.

Ingredients You’ll Need

Citrus Marinade

  • Orange juice: Fresh squeezed is great, but bottled is totally fine here. Orange is the main “sunny” flavor in this marinade.
  • Lime juice: This is what gives it that sharper citrus kick. I like using fresh limes if you have them.

  • Lemon juice: Just a little helps keep the citrus from tasting flat. Don’t skip it if you can help it.
  • Orange zest: Zest is where the real orange flavor lives. It makes the chicken smell more citrusy even after grilling.
  • Olive oil: Helps the marinade coat the chicken and keeps it from sticking. Use a regular everyday olive oil.
  • Honey: Adds sweetness and helps the outside brown faster on the grill. If you like a more charred finish, keep an eye on it toward the end.
  • Soy sauce: Gives you that savory, salty base that makes the citrus taste more balanced. If you’re sensitive to salt, use low-sodium.
  • Dijon mustard: I like Dijon here because it blends in smoothly and gives a little tang. Yellow mustard works in a pinch, but it’s a different flavor.
  • Garlic: Fresh minced garlic is best here. Jarred garlic works too, but it’s a little milder.

  • Smoked paprika: Adds gentle smoky flavor that goes really well with the grill. Regular paprika is fine if that’s what you have.
  • Ground cumin: Just enough to warm things up a bit. It shouldn’t taste “cumin-y,” it just rounds things out.
  • Kosher salt: Kosher salt is easier to control and mixes in well. If you’re using table salt, reduce it a little.
  • Black pepper: Freshly ground is great, but any black pepper works. It matters more here than you’d think.
  • Red pepper flakes (optional): Adds a small bit of heat. I use it when I’m serving this with rice bowls or salads.

Chicken and Grilling

  • Chicken: Boneless skinless breasts or thighs both work. I reach for thighs when I want the easiest, juiciest result.
  • Neutral oil: This is just for the grill grates so the chicken releases cleanly. Avocado oil or canola oil are both good options.

  • Orange or lime slices (optional): Nice for grilling alongside the chicken and squeezing over at the end. It also makes the plate look a little more put together.
  • Fresh cilantro or parsley (optional): A small handful on top is plenty. Use whichever herb you like with citrus.

Recipe Instructions

  1. Whisk the marinade: In a bowl, whisk the orange juice, lime juice, lemon juice, orange zest, olive oil, honey, soy sauce, Dijon mustard, garlic, smoked paprika, cumin, kosher salt, black pepper, and red pepper flakes (if using) until combined.
  2. Marinate the chicken: Add the chicken and coat it evenly. Cover and refrigerate for at least 30 minutes, or up to 8 hours.
  3. Preheat the grill: Heat the grill to medium-high heat, about 425°F. Oil the grates with the neutral oil.
  4. Grill the chicken: Remove the chicken from the marinade and let the excess drip off. Grill covered until well marked and cooked through, about 5 to 7 minutes per side for breasts or 4 to 6 minutes per side for thighs.
  5. Rest the chicken: Transfer the chicken to a plate and let it rest for 5 minutes before slicing.

  6. Grill the citrus (optional): Grill orange or lime slices for 1 to 2 minutes per side, just until they pick up grill marks.
  7. Slice and serve: Slice the chicken against the grain. If you want to use some marinade as a sauce, bring it to a full boil for 1 minute first, then spoon a little over the chicken. Garnish with herbs and serve with grilled citrus.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use thighs if you’re even slightly worried about dryness. They stay juicy with very little effort, and they’re more forgiving if your grill runs hot.

Don’t marinate longer than overnight. Citrus can start to change the texture if it sits too long. For this one, up to 8 hours is the sweet spot.

Let the excess marinade drip off. If the chicken goes on dripping wet, it tends to steam at first and you miss out on the best browning.

Know when to flip. If the chicken is sticking, it usually just needs another minute. Once it’s properly seared, it will release more easily.

Boil any marinade you want to spoon on top. If you want that extra saucy finish, bring the reserved marinade to a full boil for 1 minute before using it.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Rice bowls: Slice the chicken and serve it over white rice or brown rice with cucumber, avocado, and extra lime. A little chopped cilantro on top is nice.
  • Grilled vegetables: I like this with zucchini, bell peppers, or asparagus cooked on the grill right after the chicken. The citrus goes well with slightly charred veggies.
  • Potato side: Roasted potatoes, grilled potatoes in foil, or even a simple potato salad all work. Something starchy is good with the bright marinade.
  • Salad: A chopped romaine salad with tomato, red onion, and a simple vinaigrette is an easy match. Add sliced chicken right on top for a full meal.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. I usually slice it first so it’s easy to grab for lunches.

You can marinate the chicken ahead and keep it in the fridge until you’re ready to grill. I try not to go past 8 hours since the citrus can start to change the texture.

To reheat, warm it gently in the microwave in short bursts, or heat it in a skillet with a splash of water. Grilled chicken can dry out if it’s blasted too long, so slower is better.

If you want to use coconut aminos instead of soy sauce, it keeps well the same way. Just reduce the salt slightly when you mix the marinade so it doesn’t get too salty after cooking.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I cook this indoors if I don’t have a grill?

Yes. A grill pan over medium-high heat works well, and the cook times stay pretty similar. You can also use a regular skillet, but you’ll miss the grill marks.

Is it better with chicken breasts or chicken thighs?

Both work, but I prefer thighs when I want the juiciest result and the easiest timing. Breasts are great too—just watch the cook time closely and pull them as soon as they’re cooked through.

Can I use the marinade as a sauce?

You can, but only if you bring it to a full boil for 1 minute first. I usually boil a little in a small saucepan, then spoon it lightly over the sliced chicken.

What can I use instead of soy sauce?

Coconut aminos are the easiest swap and keep the same general flavor direction. I’d reduce the added salt a bit since different brands vary.

How do I know when the chicken is done?

The most reliable way is a thermometer: 165°F in the thickest part for breasts, and thighs are best around 165°F to 175°F. If you’re going by feel, the chicken should be firm and the juices should run clear.
