Strawberry Shortcake Trifle is my go-to no-bake dessert when I want something that looks a little special but doesn’t take all day. It’s layered with pound cake, a thick vanilla cream, and juicy strawberries that taste like summer.
What makes this version worth making is the combination of cream cheese and pudding in the cream layer. It sets up nicely, stays spoonable, and gives you that classic strawberries-and-cream flavor without being runny.
I like serving it for cookouts, casual birthdays, and holidays when the fridge is already full and I don’t want to bake. It’s also nice when you need a dessert that can sit and chill while you do everything else.

Why You’ll Love This Recipe
No-bake: No oven, no water bath, no stress. It’s the kind of dessert I can put together even when it’s hot out.
Make-ahead friendly: This is better after a chill, which makes it easy when you’re planning for guests. You can assemble it earlier and keep it in the fridge until you’re ready.
Real strawberry flavor: Macerated berries taste like strawberries should, and the juices soak into the cake layers in the best way. It’s not the same if you skip that step.
Thick, stable cream: The pudding and cream cheese combo helps the vanilla layer hold its shape. It still tastes light, but it won’t slide all over the place.
Easy to customize: You can swap the cake, change the garnish, or add extra berries on top. It’s flexible without being fussy.
Ingredients You’ll Need
Macerated Strawberries
- Fresh strawberries: Ripe and fragrant is the whole point here. If they’re pale and crunchy, the trifle will taste flat.
- Granulated sugar: This pulls out the juices and gives you that syrupy strawberry layer that soaks into the cake.
- Lemon juice: Just enough to wake up the berries. I don’t skip it, especially if the strawberries aren’t super sweet.
- Vanilla extract: A small amount makes the strawberries taste more like strawberry shortcake and less like plain fruit salad.
Vanilla Cream
- Cream cheese: Use full-fat if you can, and make sure it’s softened so you don’t end up with little lumps.
- Powdered sugar: I like this here because it dissolves fast and keeps the cream layer smooth.
- Vanilla extract: This is the main flavor in the cream, so use the good stuff if you have it.
- Instant vanilla pudding mix: This helps the cream set and makes it easier to slice and spoon later. Make sure it’s instant, not cook-and-serve.
- Cold milk: Cold matters for instant pudding so it thickens up the way it should.
- Heavy cream: Whipped cream folded in keeps the vanilla layer lighter. Start with cold cream so it whips quickly.
Assembly
- Prepared pound cake: I like pound cake because it holds up in the fridge and doesn’t disappear into mush. Store-bought is totally fine.
- Sliced strawberries: Optional, but they make the top look nicer and give you a little fresh texture.
- Crushed shortbread cookies: This is a nice finishing touch if you want a bit of crunch. I usually add it right before serving so it stays crisp.
- Fresh mint: Also optional, but it’s an easy way to make the top look finished without doing much.

Recipe Instructions
- Macerate strawberries: Toss the sliced strawberries with the granulated sugar, lemon juice, and vanilla extract. Let them sit for about 20 minutes, stirring once, until the berries release a nice amount of juice.
- Beat cream cheese: Beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy, scraping the bowl as needed.
- Mix pudding: In a separate bowl, whisk the instant vanilla pudding mix with the cold milk for about 2 minutes. Let it stand for about 5 minutes to thicken.
- Whip cream: Whip the cold heavy cream to soft peaks. It should look fluffy and hold its shape, but still be a little soft.
- Fold cream: Fold the whipped cream into the thickened pudding until combined, then fold in the sweetened cream cheese until smooth.
- Layer trifle: Add one third of the pound cake cubes to a 3 to 4 quart trifle dish. Spoon on one third of the vanilla cream, then add one third of the macerated strawberries with some of the juices.
- Repeat layers: Repeat the layers two more times, finishing with vanilla cream and strawberries on top.
- Chill: Cover and refrigerate for at least 2 hours before serving so the layers can set and the flavors blend.
- Garnish: Top with sliced strawberries and, if you like, crushed shortbread cookies and fresh mint right before serving.

Some of my tips!
This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.
Recipe Tips & Tricks
Use ripe strawberries. This recipe really depends on good berries. If they’re not great, the trifle will still be fine, but it won’t have that strong strawberry flavor.
Don’t skip the macerating time. You want those juices for the cake layers. Stir them once while they sit so the sugar dissolves evenly.
Soften the cream cheese fully. If it’s still cold, it tends to leave little lumps in the cream. I usually set it out while I prep the strawberries.
Whip to soft peaks, not stiff. Soft peaks fold in easier and keep the vanilla layer smooth. If you go too far, it can start to look a little grainy when you mix it.
Cut the cake into bite-size cubes. Big chunks make the trifle harder to scoop and you end up with uneven layers. Smaller cubes also soak up the strawberry juices better.
Make some touches!
There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.
Serving Suggestions
- Extra berries: Set out a bowl of sliced strawberries on the side for anyone who wants more fruit. This is especially nice if your berries are super sweet.
- Cookie crumbs: Sprinkle crushed shortbread or vanilla wafers on each portion right before serving. It adds a little crunch and makes it feel more like shortcake.
- Lemonade or iced tea: A cold drink is nice with this, especially in summer. I usually go with unsweetened iced tea or lemonade.
- Individual cups: Portion the layers into small glasses for parties. It’s easier to serve and you still get all the layers in each one.
Save it for later
This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.
Storage and Make Ahead
Store leftovers covered in the fridge for up to 4 days. The cake will soften more as it sits, but it’s still very scoopable and good.
You can make this recipe ahead and keep it refrigerated before serving. I like it best made 2 to 8 hours in advance so the layers have time to chill and set.
If you’re adding cookie crumbs or mint, add them right before serving. The crumbs soften quickly in the fridge and the mint can get dark.
I don’t usually freeze this one. The cream layer can get a little watery after thawing, and the strawberries lose their fresh texture.

A few quick answers
This section covers a few extra details that may help before you head to the recipe card.
Recipe FAQs
Can I use angel food cake instead of pound cake?
Yes. Angel food cake makes the trifle lighter and a little less rich. Just be gentle when you layer it since it tears more easily than pound cake.
Do I have to use instant pudding mix?
For this specific cream layer, yes, instant is what helps it set quickly and hold up in the trifle. Cook-and-serve pudding doesn’t behave the same way and usually needs different handling.
Can I use whipped topping instead of whipping cream?
You can swap in about 8 ounces of whipped topping if you want a shortcut. The texture will be a little softer and sweeter, but it still works well for a trifle.
How far ahead can I assemble the trifle?
I’d assemble it up to about 8 hours ahead and keep it refrigerated. After that it’s still fine, but the cake gets noticeably softer and the layers won’t look as clean.
What else can I garnish the top with?
Sliced strawberries are my favorite because they match what’s inside. You can also add shortbread crumbs, white chocolate curls, or a few whole small strawberries if you want it to look a little more finished.
