Toffee Poke Dessert

Toffee Poke Dessert is a chilled chocolate poke cake that gets soaked with sweetened condensed milk and caramel, then finished with a fluffy topping and crunchy toffee bits. It’s rich, cold, and very much a “slice it and serve it” kind of dessert.

I like this one because the cake stays really moist after it sits, and the caramel-toffee combo tastes like a candy bar in cake form. The whipped topping keeps it light enough to go back for a smaller second piece.

This is one of my go-tos for potlucks and holiday tables because it travels well and it’s better after a good chill. I usually serve it straight from the fridge, with a little extra toffee on top if I have it.

Why You’ll Love This Recipe

Easy to Make Ahead: This dessert actually improves after a couple hours in the fridge, so it’s great when you want it done before guests show up.

Rich Chocolate Base: Starting with a chocolate cake mix keeps it simple, but it still tastes deep and chocolatey, especially with a fudge or devil’s food mix.

That Soaked Cake Texture: The condensed milk and caramel sink in and make the cake soft and plush, more like a pudding-style cake than a dry sheet cake.

Low-Stress Topping: Whipped topping spreads fast, looks neat, and gives you a clean finish without messing with frosting.

Toffee Crunch: The toffee bits add the little crunchy, buttery thing that makes each bite more interesting.

Ingredients You’ll Need

Cake

  • Chocolate cake mix: I like chocolate fudge or devil’s food here because it stands up to the caramel and toffee. Any standard 9×13-friendly mix works.
  • Eggs: These give the cake structure so it holds up after you poke and soak it. Use large eggs if you can.
  • Water: Plain water is fine since the cake gets plenty of flavor from the soak and topping.
  • Vegetable oil: Oil keeps the cake softer than butter once it’s chilled. Canola works too.

Filling

  • Sweetened condensed milk: Don’t swap this with evaporated milk. Condensed milk is what gives you that thick, sweet soak that stays in the cake.
  • Caramel sauce: The jar kind is totally fine. Dulce de leche is also really good if you want a deeper caramel flavor.

Topping

  • Whipped topping: This spreads easily and stays stable in the fridge. If you use homemade whipped cream, plan to serve it a little sooner.
  • Toffee bits: I like the small bits because they sprinkle evenly and you get crunch in every slice. Heath-style bits are the classic choice.
  • Chocolate syrup (optional): This is just for looks and a little extra chocolate on top. I do it when I’m taking it somewhere.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F and grease a 9×13-inch baking dish.
  2. Mix the batter: Prepare the cake batter using the cake mix, eggs, water, and oil, then pour it into the prepared dish.

  3. Bake: Bake until a toothpick comes out clean, about 28 to 33 minutes.
  4. Cool: Let the cake cool for about 10 minutes.
  5. Poke the cake: Poke holes all over the warm cake using the handle of a wooden spoon.
  6. Add the condensed milk: Pour the sweetened condensed milk evenly over the cake, letting it sink into the holes.
  7. Add the caramel: Drizzle the caramel sauce evenly over the top and spread it gently if needed.
  8. Chill: Cool to room temperature, then cover and refrigerate at least 2 hours (overnight is even better).
  9. Top: Spread whipped topping evenly over the chilled cake.

  10. Finish: Sprinkle with toffee bits and drizzle with chocolate syrup if using.
  11. Serve: Refrigerate until serving, then slice and serve cold.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Poke deep, evenly spaced holes. The handle of a wooden spoon is the right size. If the holes are too small, the soak won’t really get down into the cake.

Pour the condensed milk while the cake is still warm. Warm cake absorbs better. If you wait too long, it tends to sit more on top instead of sinking in.

Go gentle when spreading caramel. If your caramel is thick, it helps to warm it slightly so it drizzles instead of clumping. Spread lightly so you don’t tear up the cake.

Chill longer for cleaner slices. Two hours works, but I think this cuts much nicer after about 4 hours. Wipe your knife between cuts for neat pieces.

Use a darker cake mix. Devil’s food or chocolate fudge gives you a stronger chocolate base, which is what I prefer with all the sweet topping.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is classic with this. It’s especially nice if you go heavy on the toffee bits.
  • Coffee: This is really good with coffee, hot or iced. I usually serve it after dinner with plain black coffee.
  • Ice cream: If you want to make it a bigger dessert plate, add a small scoop of vanilla ice cream on the side. Keep the cake cold and let the ice cream soften a bit.
  • Fruit: Strawberries or raspberries on the plate are nice here. I like the fresh bite next to the caramel and chocolate.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. This cake is meant to be served cold, so you can slice it straight from the fridge whenever you want.

You can make this recipe ahead really easily. I usually bake and soak the cake the night before, then add the whipped topping and toffee closer to serving.

If you want them to last longer, you can freeze individual portions in airtight containers. Thaw in the fridge overnight; the texture stays soft, but the toffee topping may lose some crunch.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use homemade whipped cream instead of whipped topping?

You can, but it won’t hold as long. If I’m using homemade whipped cream, I add it the same day I’m serving the cake, and I keep it very cold.

What’s the best cake mix for this?

I like chocolate fudge or devil’s food. A regular chocolate mix works too, but the darker mixes taste better with the caramel and toffee.

Can I use dulce de leche instead of caramel sauce?

Yes. Jarred dulce de leche is great here and tastes a little deeper and milkier than caramel sauce. Warm it slightly so it’s easy to drizzle and spread.

Why does my cake look messy when I cut it?

This cake slices cleaner when it’s fully chilled. Give it at least 4 hours if you can, and wipe the knife between cuts.

Can I add extra toppings?

Sure. Chopped pecans are good with the toffee, and a little extra chocolate drizzle on each slice looks nice. Just don’t overload the top or it gets hard to cut.
