Amish White Dinner Rolls

INGREDIENTS

Yeast Starter

  • 1 cup warm water
  • 2 1/4 tsp active dry yeast
  • 1 tbsp granulated sugar.

Dough

  • 1 cup warm milk
  • 1/3 cup granulated sugar
  • 1/3 cup unsalted butter melted
  • 1 large egg
  • 1 1/2 tsp fine salt
  • 5 1/2 cups all purpose flour.

Finish

  • 2 tbsp unsalted butter melted for brushing
  • flour for dusting.

INSTRUCTIONS

Activate Yeast

  • whisk warm water
  • yeast
  • and 1 tbsp sugar and rest until foamy about 5 to 10 minutes
  • stir in warm milk
  • 1/3 cup sugar
  • melted butter
  • egg
  • and salt until combined.

Mix and Knead

  • add flour 1 cup at a time until a soft slightly tacky dough forms
  • knead 8 to 10 minutes by hand or 5 to 7 minutes with a mixer until smooth and elastic.

Rise Shape Bake

  • place dough in a lightly greased bowl cover and rise until doubled about 60 to 90 minutes
  • divide into 15 equal pieces shape into smooth balls and place in a greased 9x13 inch pan then cover and rise until puffy 30 to 45 minutes
  • bake at 375 F until golden brown 18 to 22 minutes then brush with melted butter and cool 10 minutes before serving.

Notes

1. Use instant yeast in the same amount and skip the proofing step by mixing it with the flour. Add up to 1/2 cup more flour if dough is very sticky but keep it soft for fluffy rolls. For make ahead refrigerate shaped rolls covered overnight then bring to room temperature and let rise before baking. Substitute bread flour for a slightly chewier roll
