Apple Dessert Lasagna Salad

INGREDIENTS

Apple Layer

  • 6 cups peeled diced apples
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar.

Cream and Pudding Layer

  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 box 3.4 oz instant vanilla pudding mix
  • 1.5 cups cold milk
  • 2 cups whipped topping thawed.

Crunch and Toppings

  • 2 cups crushed graham crackers or vanilla wafers
  • 6 tbsp unsalted butter melted
  • ½ cup caramel sauce plus more for drizzling
  • ½ cup toffee bits
  • whipped cream for topping.

INSTRUCTIONS

Apple Layer

  • toss diced apples with lemon juice
  • cinnamon
  • and sugar until evenly coated then set aside.

Cream and Pudding Layer

  • beat cream cheese with powdered sugar and vanilla until smooth
  • whisk pudding mix with cold milk until thickened about 2 minutes then fold into cream cheese mixture
  • fold in whipped topping until fully combined.

Assemble and Chill

  • mix crushed cookies with melted butter until evenly moistened
  • press half the crumb mixture into the bottom of a 9x13 inch dish or trifle bowl
  • spread half the cream layer over crumbs then spoon on half the apples
  • drizzle with caramel and sprinkle toffee bits
  • repeat layers ending with remaining crumbs and toppings
  • cover and chill at least 1 hour before serving.

Notes

1. Use crisp tart apples like Granny Smith or Honeycrisp for best texture. Toss apples with lemon juice to prevent browning. Swap instant cheesecake or butterscotch pudding for vanilla. For lighter version use reduced fat cream cheese and light whipped topping. Add chopped pecans or walnuts for extra crunch
