INGREDIENTS

Pretzel crust

  • 2 cups pretzel twists crushed
  • 3/4 cup unsalted butter melted
  • 3 tbsp granulated sugar.

Cream layer

  • 8 oz cream cheese softened
  • 1 cup granulated sugar
  • 8 oz whipped topping thawed.

Berry gelatin topping

  • 6 oz strawberry gelatin
  • 2 cups boiling water
  • 2 cups ice water
  • 3 cups mixed berries fresh or frozen thawed and well drained.

INSTRUCTIONS

Pretzel crust

  • heat oven to 350 degrees F
  • mix crushed pretzels with melted butter and 3 tbsp sugar until evenly coated
  • press firmly into a 9x13 inch baking dish
  • bake 10 minutes
  • cool completely to keep the cream layer from melting.

Cream layer

  • beat cream cheese with 1 cup sugar until smooth
  • fold in whipped topping until fully combined
  • spread evenly over cooled crust and seal to the edges to prevent gelatin from seeping through
  • refrigerate 30 minutes.

Berry gelatin topping

  • whisk gelatin into boiling water until dissolved
  • stir in ice water and let stand until slightly thickened and cool but not set
  • fold in drained berries
  • pour gently over cream layer
  • refrigerate 4 hours or until fully set before slicing.

Notes

1. Seal the cream layer tightly to the pan edges to prevent a soggy crust 2. drain berries very well to help the gelatin set 3. substitute raspberry gelatin and berries for a different flavor 4. use gluten free pretzels for a gluten free option
