INGREDIENTS

Dry Ingredients

  • 1 1/2 cups all purpose flour
  • 2 cups old fashioned rolled oats
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1 tsp ground cinnamon.

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp milk.

Optional Mix Ins

  • 1 cup raisins or chocolate chips
  • 1/2 cup chopped walnuts or pecans.

INSTRUCTIONS

Mix Dough

  • Preheat oven to 350 F and line baking sheets with parchment paper
  • whisk flour oats baking soda salt and cinnamon until evenly combined
  • cream butter and brown sugar until light and fluffy
  • beat in eggs then vanilla and milk until smooth
  • mix dry ingredients into wet ingredients just until no dry flour remains
  • fold in optional mix ins if using
  • chill dough 20 to 30 minutes for thicker cookies if desired.

Bake And Cool

  • Scoop 1 1/2 tbsp portions onto baking sheets spaced apart and lightly flatten tops
  • bake until edges are set and centers look slightly underbaked 9 to 11 minutes
  • cool on baking sheet 5 minutes then transfer to a rack to cool completely.

Notes

1. Use old fashioned rolled oats for best chew; Chill dough 20 to 30 minutes to reduce spreading; For deeper brown sugar flavor add 1 tbsp molasses; Substitute 1/2 cup butter with 1/2 cup neutral oil for softer cookies; Store airtight up to 4 days or freeze baked cookies up to 2 months
