Cheesy Beef Enchilada Dinner

INGREDIENTS

Beef Filling

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 2 tbsp taco seasoning
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup water
  • 1 cup shredded cheddar cheese.

Enchiladas

  • 8 flour tortillas 8 inch
  • 2 cups red enchilada sauce
  • 2 cups shredded Monterey Jack cheese.

Optional Toppings

  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • 2 green onions sliced
  • lime wedges.

INSTRUCTIONS

Make Filling

  • Heat olive oil in a large skillet over medium heat and cook ground beef until browned
  • add onion and cook until softened then add garlic and cook briefly
  • stir in taco seasoning salt pepper and water and simmer until slightly thickened then remove from heat and stir in cheddar cheese.

Assemble and Bake

  • Heat oven to 375 F and lightly grease a 9 by 13 inch baking dish
  • spread 0.5 cup enchilada sauce in the dish
  • fill tortillas with beef mixture roll and place seam side down then pour remaining enchilada sauce over tortillas and sprinkle Monterey Jack evenly
  • bake until hot and bubbly and cheese is melted 20 to 25 minutes then rest 5 minutes before serving.

Serve

  • Top with sour cream cilantro and green onions and serve with lime wedges.

Notes

1. Swap flour tortillas for corn tortillas and warm briefly to prevent cracking; Use a mix of cheddar and Monterey Jack or pepper jack for more heat; Make ahead by assembling and refrigerating up to 24 hours then bake adding 5 to 10 minutes; Add 1 cup drained black beans or 1 cup corn to the filling if desired; Use mild or hot enchilada sauce to control spice level
