Cheesy Sloppy Joe Casserole

INGREDIENTS

Sloppy Joe Filling

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 cup yellow onion diced
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 1 can tomato sauce 8 oz
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper.

Casserole Assembly

  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots 32 oz
  • cooking spray.

Optional Garnish

  • sliced green onions
  • fresh parsley.

INSTRUCTIONS

Sloppy Joe Filling

  • Heat oven to 400 F and lightly grease a 9x13 inch baking dish
  • heat olive oil in a large skillet over medium high heat and cook onion 3 to 4 minutes until softened then stir in garlic for 30 seconds
  • add ground beef and cook until browned then drain excess fat
  • stir in ketchup tomato sauce brown sugar Worcestershire mustard chili powder paprika salt and pepper and simmer 5 minutes until thickened.

Bake

  • Spread sloppy joe mixture evenly in the baking dish and sprinkle with 1 cup cheddar
  • arrange frozen tater tots in an even layer over the top and bake 25 minutes until tots are crisp
  • sprinkle remaining 1 cup cheddar over the tots and bake 5 minutes more until melted then rest 5 minutes before serving and garnish if desired.

Notes

1. Use ground turkey or chicken for a lighter version 2. swap homemade sauce with 1 can sloppy joe sauce 15 oz and reduce ketchup 3. add diced bell pepper or jalapeno with the onion 4. use a cheddar mozzarella blend for extra melt 5. assemble up to 24 hours ahead and bake when ready
