INGREDIENTS

Batter

  • 1 cup unsalted butter melted and slightly cooled
  • 1 1 2 cups light brown sugar packed
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 1 4 cups all purpose flour
  • 1 tsp baking powder
  • 1 2 tsp fine salt
  • 1 1 2 cups old fashioned rolled oats
  • 1 2 tsp ground cinnamon optional.

Mix ins

  • 3 4 cup semisweet chocolate chips
  • 1 2 cup chopped walnuts or pecans optional.

INSTRUCTIONS

Prep

  • heat oven to 350 F
  • line an 8 inch square baking pan with parchment and lightly grease
  • whisk melted butter and brown sugar until smooth
  • whisk in eggs and vanilla until glossy.

Bake and cool

  • stir in flour baking powder salt oats and cinnamon just until combined
  • fold in chocolate chips and nuts if using
  • spread batter evenly in pan
  • bake until edges are set and center is slightly soft 20 to 25 minutes
  • cool completely in pan for clean cuts then slice and serve.

Notes

1. Use old fashioned oats for best chew; do not overmix after adding flour to keep bars tender; bake just until set to avoid dry blondies; swap chocolate chips for raisins butterscotch chips or white chocolate; for deeper flavor brown the butter then cool before mixing; store airtight up to 4 days or freeze up to 2 months
