Chewy Oatmeal Cookie Bars

INGREDIENTS

Dry Ingredients

  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1 tsp ground cinnamon optional
  • 3 cups old fashioned rolled oats.

Wet Ingredients

  • 1 cup unsalted butter melted and slightly cooled
  • 1 1/2 cups light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract.

Mix Ins

  • 1 1/2 cups semisweet chocolate chips optional
  • 1/2 cup chopped walnuts or pecans optional.

INSTRUCTIONS

Prep

  • heat oven to 350 F
  • line a 9x13 inch pan with parchment and lightly grease.

Make Batter

  • whisk melted butter with brown sugar and granulated sugar until smooth
  • whisk in eggs and vanilla until glossy
  • stir in flour baking soda salt and cinnamon just until combined
  • fold in oats until evenly mixed
  • fold in chocolate chips and nuts if using.

Bake And Cool

  • spread batter evenly in prepared pan and press lightly to level
  • bake until edges are set and lightly browned and center is just set 20 to 25 minutes
  • cool completely in pan for clean cuts then lift out and slice into bars.

Notes

1. For extra chew underbake slightly and cool fully before slicing 2. use old fashioned oats not quick oats for best texture 3. swap chocolate chips for raisins dried cranberries or butterscotch chips 4. add 1 to 2 tbsp milk if batter seems overly dry 5. store airtight up to 4 days or freeze up to 2 months
