Chocolate Caramel Turtle Cheesecake Bars

INGREDIENTS

Chocolate Crust

  • 2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter melted
  • 2 tbsp granulated sugar
  • 1 pinch fine salt.

Cheesecake Filling

  • 24 oz cream cheese softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream room temperature
  • 2 tsp vanilla extract
  • 3 large eggs room temperature
  • 1 tbsp all purpose flour optional for stability
  • 1/4 tsp fine salt.

Turtle Topping

  • 1 cup thick caramel sauce divided
  • 1 cup chopped pecans lightly toasted
  • 3/4 cup semisweet chocolate chips
  • 2 tbsp heavy cream optional for smoother drizzle
  • flaky sea salt optional.

INSTRUCTIONS

Pan And Crust

  • Preheat oven to 325 F and line a 9 by 13 inch pan with parchment leaving overhang
  • mix cookie crumbs butter sugar and salt until evenly moistened
  • press firmly into an even layer and bake 10 minutes then cool slightly.

Cheesecake Filling And Bake

  • Beat cream cheese and sugar until smooth scraping bowl
  • beat in sour cream vanilla flour if using and salt
  • add eggs one at a time mixing on low just until combined
  • pour over crust and smooth top
  • bake 30 to 35 minutes until edges are set and center has a slight wobble
  • turn off oven crack door 10 minutes then cool to room temperature.

Topping And Chill

  • Warm caramel until pourable and spread 1/2 cup over cooled cheesecake
  • sprinkle pecans evenly
  • heat chocolate chips with heavy cream in short intervals stirring until smooth then drizzle over top
  • chill at least 4 hours or overnight until fully set
  • lift out using parchment overhang and slice into bars wiping knife between cuts.

Notes

1. Use full fat cream cheese for best texture. Mix eggs on low and avoid overbaking to prevent cracks. Substitute dulce de leche for caramel sauce or use store bought caramel dip for a thicker layer. Toast pecans 5 to 8 minutes for deeper flavor. For clean slices chill well and use a warm dry knife
