Chocolate Turtle Bars

INGREDIENTS

Crust

  • 1 cup all purpose flour
  • 1 cup packed light brown sugar
  • 1 cup unsalted butter melted
  • 1 tsp vanilla extract
  • ¼ tsp fine salt.

Pecan caramel layer

  • 2 cups pecan halves roughly chopped
  • 11 oz caramel candies unwrapped
  • ⅓ cup heavy cream.

Chocolate topping

  • 1.5 cups semisweet chocolate chips
  • 1 tbsp neutral oil or melted butter
  • flaky salt to taste.

INSTRUCTIONS

Prep and crust

  • Heat oven to 350 degrees F and line a 9 x 13 inch pan with parchment leaving overhang
  • Mix flour brown sugar melted butter vanilla and salt until evenly combined
  • Press mixture firmly into an even layer in the pan
  • Bake until set and lightly golden around edges about 15 minutes.

Caramel pecan bake

  • Sprinkle pecans evenly over the hot crust
  • Heat caramels and heavy cream in a saucepan over low heat stirring until smooth or microwave in short bursts stirring until melted
  • Pour caramel over pecans and spread gently to cover
  • Bake until caramel is bubbling and slightly darkened about 10 to 12 minutes
  • Cool 15 minutes.

Chocolate finish

  • Melt chocolate chips with oil until smooth then pour over caramel layer
  • Spread into an even layer and let set at room temperature then chill until firm about 60 minutes
  • Lift out using parchment and slice into bars with a warm dry knife.

Notes

1. Line pan with parchment for clean removal 2. Toast pecans 5 to 8 minutes for stronger flavor 3. Substitute dulce de leche or thick caramel sauce for melted caramels 4. Chill before cutting for sharp layers 5. Add flaky salt on top to balance sweetness
