INGREDIENTS

Dough

  • 3.5 cups all purpose flour
  • 2.25 tsp active dry yeast
  • ¼ cup granulated sugar
  • 1 tsp fine salt
  • 1 cup warm milk
  • ¼ cup warm water
  • ¼ cup unsalted butter melted
  • 1 large egg
  • 2 tbsp honey.

Honey Butter

  • ½ cup unsalted butter softened
  • ¼ cup honey
  • 2 tbsp powdered sugar optional
  • salt to taste.

Finish

  • 2 tbsp unsalted butter melted
  • flaky salt optional.

INSTRUCTIONS

Mix and knead

  • Warm milk and water to lukewarm
  • stir in yeast and 1 tbsp sugar and rest until foamy
  • whisk in remaining sugar
  • salt
  • melted butter
  • egg
  • and honey
  • mix in flour until a soft dough forms
  • knead by mixer or by hand until smooth and elastic about 7 to 10 minutes adding a little flour only if very sticky.

Rise shape bake and glaze

  • Place dough in a lightly greased bowl cover and rise until doubled about 60 minutes
  • punch down and divide into 12 pieces and shape into tight balls
  • arrange in a greased 9x13 pan cover and rise until puffy about 30 to 45 minutes
  • bake at 350 F until golden and cooked through about 16 to 20 minutes
  • mix honey butter ingredients until smooth
  • brush hot rolls with melted butter then spread or brush with honey butter and serve warm.

Notes

1. For faster rise use an oven proofing setting or a warm draft free spot; Substitute instant yeast by mixing it directly with dry ingredients and reducing first proof time; Use bread flour for slightly chewier rolls; Make ahead by refrigerating shaped rolls overnight then bring to room temperature and bake; Freeze baked rolls and rewarm covered at 300 F
