INGREDIENTS

Biscuits

  • 2.5 cups all purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp fine salt
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter cold and cubed
  • 1 cup buttermilk cold
  • 2 tbsp melted butter for brushing.

Honey Butter

  • ½ cup unsalted butter softened
  • ¼ cup honey
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • pinch of salt.

INSTRUCTIONS

Biscuit Dough

  • Preheat oven to 425 F and line a baking sheet with parchment
  • whisk flour baking powder baking soda salt and sugar
  • cut in cold butter until pea size crumbs form
  • stir in cold buttermilk just until a shaggy dough forms and do not overmix.

Shape And Bake

  • Turn dough onto a lightly floured surface and gently pat into a 0.75 inch thick rectangle then fold in thirds and pat again 1 to 2 times for layers
  • cut 8 biscuits with a 2.5 inch cutter and place close together on the sheet
  • bake until tall and golden 12 to 14 minutes then brush tops with melted butter.

Honey Butter Finish

  • Beat softened butter honey powdered sugar vanilla and salt until smooth and spreadable
  • brush or spoon honey butter over warm biscuits and serve with extra on the side.

Notes

1. Use very cold butter and buttermilk for best rise. If no buttermilk use 1 cup milk plus 1 tbsp lemon juice and rest 5 minutes. For extra tender biscuits replace up to 0.5 cup flour with cake flour. Do not twist the cutter to help biscuits rise straight
