Creamy Pasta Bake

INGREDIENTS

Pasta

  • 12 oz penne pasta
  • 1 tbsp salt for pasta water.

Aromatics and Protein

  • 1 tbsp olive oil
  • 1 lb ground Italian sausage or ground beef
  • 1 small onion diced
  • 3 garlic cloves minced.

Creamy Tomato Sauce

  • 2 tbsp tomato paste
  • 1 can 28 oz crushed tomatoes
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 cup heavy cream
  • ½ cup chicken broth or pasta water.

Cheese and Topping

  • 2 cups mozzarella shredded
  • ½ cup parmesan grated
  • ½ cup ricotta optional
  • ½ cup panko breadcrumbs
  • 2 tbsp melted butter.

Finish

  • fresh basil or parsley for garnish.

INSTRUCTIONS

Prep

  • preheat oven to 375 F and lightly grease a 9x13 inch baking dish
  • bring a large pot of salted water to a boil and cook pasta 2 minutes less than package directions then drain and reserve 0.5 cup pasta water.

Cook Sauce

  • heat olive oil in a large skillet over medium high heat and brown sausage then drain excess fat if needed
  • add onion and cook until softened then add garlic and cook until fragrant
  • stir in tomato paste for 1 minute then add crushed tomatoes Italian seasoning salt pepper and red pepper flakes and simmer 8 to 10 minutes
  • reduce heat to low and stir in heavy cream and broth or reserved pasta water and simmer 2 minutes until smooth.

Assemble

  • stir cooked pasta into the sauce then fold in ricotta if using and 1.5 cups mozzarella
  • spread into baking dish and top with remaining mozzarella and parmesan
  • mix panko with melted butter and sprinkle over the top.

Bake

  • bake uncovered 20 to 25 minutes until bubbling and browned
  • rest 5 minutes then garnish with basil or parsley and serve.

Notes

1. Undercook pasta so it stays firm after baking; Substitute rotisserie chicken or sauteed mushrooms for sausage; Use half and half for a lighter sauce or add 2 oz cream cheese for extra richness; Add spinach peas or roasted red peppers for vegetables; Make ahead and refrigerate assembled dish up to 24 hours then bake 5 to 10 minutes longer
