Grilled Shrimp Tostadas

INGREDIENTS

Grilled Shrimp

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 4 tsp black pepper
  • 1 tbsp chopped cilantro.

Cabbage Slaw

  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 2 tbsp chopped cilantro
  • salt to taste.

Creamy Lime Sauce

  • 1 2 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tsp hot sauce
  • 1 chipotle pepper in adobo minced optional
  • 1 4 tsp salt
  • water as needed to thin.

Tostadas and Toppings

  • 8 tostada shells
  • 1 cup refried beans warmed optional
  • 1 cup pico de gallo
  • 1 cup diced avocado
  • 1 4 cup crumbled cotija cheese
  • sliced jalapeno optional
  • lime wedges for serving.

INSTRUCTIONS

Prep Sauce and Slaw

  • whisk sour cream
  • mayonnaise
  • lime juice
  • hot sauce
  • chipotle if using
  • and salt until smooth then thin with 1 to 2 tbsp water to a drizzleable consistency
  • toss cabbages and carrots with lime juice
  • olive oil
  • cilantro
  • and salt then refrigerate while shrimp cooks.

Grill Shrimp and Assemble

  • heat a grill or grill pan to medium high and oil grates
  • toss shrimp with olive oil
  • lime juice
  • garlic
  • chili powder
  • cumin
  • paprika
  • salt
  • pepper
  • and cilantro
  • grill shrimp 2 to 3 minutes per side until opaque and lightly charred
  • spread warm refried beans on tostada shells if using
  • top with slaw
  • grilled shrimp
  • pico de gallo
  • avocado
  • cotija
  • and jalapeno if using
  • drizzle with creamy lime sauce and serve with lime wedges.

Notes

1. Use pre cooked tostada shells or bake corn tortillas at 400 F for 6 to 8 minutes per side; Swap Greek yogurt for sour cream for a lighter sauce; Use pan sear or broil if no grill is available; Add mango or pineapple for a sweet contrast; Shrimp is done when opaque and curled 2. avoid overcooking
