INGREDIENTS

Sloppy Joe Filling

  • 1.5 lb ground beef
  • 1 cup yellow onion diced
  • 1 cup green bell pepper diced
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 8 oz tomato sauce
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper.

Bake and Topping

  • cooking spray
  • 16 oz refrigerated biscuit dough
  • 1.5 cups cheddar cheese shredded
  • sliced pickles for serving
  • chopped parsley for garnish.

INSTRUCTIONS

Cook Filling

  • preheat oven to 375 F and coat a 9 by 13 inch baking dish with cooking spray
  • brown ground beef in a large skillet over medium high heat until cooked through then drain excess fat
  • add onion and bell pepper and cook until softened then stir in garlic and cook briefly
  • stir in ketchup tomato sauce brown sugar mustard Worcestershire vinegar chili powder paprika salt and pepper and simmer 5 minutes until thickened.

Assemble and Bake

  • spread filling in prepared baking dish and top evenly with cheddar cheese
  • arrange biscuit dough pieces in a single layer over the cheese leaving small gaps for steam
  • bake 18 to 22 minutes until biscuits are golden and cooked through and filling is bubbling then rest 5 minutes before serving.

Notes

1. Use ground turkey or chicken instead of beef 2. add hot sauce or cayenne for heat 3. swap biscuits with refrigerated crescent dough or cornbread batter 4. make ahead by refrigerating filling up to 2 days and topping with biscuits just before baking 5. freeze filling only then thaw and bake with fresh topping
