Ground Beef Sloppy Joe Brunch Bake

INGREDIENTS

Meat Mixture

  • 1 lb lean ground beef
  • 1 small yellow onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 cup tomato sauce
  • 3 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper.

Brunch Bake

  • 1 can refrigerated crescent roll dough 8 oz
  • 6 large eggs
  • ½ cup milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • nonstick cooking spray
  • sliced green onions for garnish.

INSTRUCTIONS

Meat Mixture

  • heat a large skillet over medium heat and cook ground beef until browned then drain excess fat
  • add onion and bell pepper and cook until softened then stir in garlic for 30 seconds
  • stir in tomato paste then add tomato sauce ketchup brown sugar mustard Worcestershire chili powder paprika salt and pepper and simmer 5 to 8 minutes until thickened.

Brunch Bake

  • heat oven to 375 F and spray a 9x13 inch baking dish
  • press crescent roll dough into the dish to cover the bottom and pinch seams then bake 6 to 8 minutes until just set
  • spread sloppy joe mixture evenly over the crust and sprinkle with cheddar and mozzarella
  • whisk eggs and milk and pour evenly over the top then gently tap the dish to help the egg settle
  • bake 20 to 25 minutes until eggs are set and the center reaches 160 F then rest 10 minutes and garnish with green onions.

Notes

1. Use ground turkey or chicken instead of beef. Swap crescent dough for refrigerated biscuit dough or thawed hash browns as the base. Add diced jalapeno for heat or use pepper jack cheese. Make meat mixture up to 2 days ahead and rewarm before assembling
