Hash Brown Sausage Egg Brunch Bake

INGREDIENTS

Casserole

  • 30 oz frozen shredded hash browns thawed and patted dry
  • 1 lb breakfast sausage
  • 1 cup yellow onion diced
  • 1 cup bell pepper diced optional
  • 2 cups shredded sharp cheddar cheese divided
  • 2 tbsp unsalted butter melted
  • cooking spray or oil for greasing
  • 2 tbsp sliced green onions optional for garnish.

Egg Mixture

  • 10 large eggs
  • 2 cups whole milk
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp smoked paprika optional.

INSTRUCTIONS

Prep

  • heat oven to 350 F
  • grease a 9 by 13 inch baking dish
  • cook sausage in a skillet over medium heat until browned and cooked through then drain
  • in a large bowl mix hash browns with melted butter then fold in cooked sausage
  • onion
  • bell pepper
  • and 1.5 cups cheddar then spread evenly in the baking dish.

Bake

  • whisk eggs with milk
  • salt
  • pepper
  • and seasonings until smooth
  • pour egg mixture evenly over the hash brown mixture and gently press to help it absorb
  • sprinkle remaining 0.5 cup cheddar on top
  • bake until center is set and a knife inserted comes out clean about 45 to 55 minutes
  • rest 10 minutes before slicing and garnish as desired.

Notes

1. Use thawed hash browns and remove excess moisture for best texture; swap sausage with cooked bacon or diced ham; add 1 to 2 cups spinach or mushrooms sautéed and cooled; assemble the night before and refrigerate then bake adding 5 to 10 minutes if cold; freeze baked portions and reheat covered until hot
