INGREDIENTS

Meat and Aromatics

  • 1 lb ground beef 80 20
  • 1 cup water
  • 1 small onion finely grated
  • 2 cloves garlic minced.

Tomato and Tang

  • 1 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 2 tsp apple cider vinegar.

Spices and Seasoning

  • 2 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp cocoa powder optional
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper optional
  • 1 tsp brown sugar optional.

INSTRUCTIONS

Brown and Break Down

  • add ground beef and water to a medium saucepan over medium heat
  • stir and mash continuously to break beef into very fine crumbles
  • cook until beef is no longer pink and most liquid is simmering.

Simmer and Thicken

  • add onion and garlic and cook 2 minutes stirring
  • stir in tomato sauce ketchup mustard Worcestershire and vinegar
  • add chili powder paprika cumin salt pepper and optional cocoa cayenne and brown sugar
  • reduce to low and simmer 20 to 25 minutes stirring often until thick and spoonable adding 1 to 3 tbsp water as needed to prevent scorching
  • taste and adjust salt heat and vinegar then rest 5 minutes before serving.

Notes

1. Use grated onion for classic smooth texture; for extra fine sauce briefly mash with a potato masher while simmering; substitute tomato paste plus water for tomato sauce if needed; make ahead and refrigerate up to 4 days or freeze up to 3 months; for leaner sauce use 90 10 beef and add 1 tsp oil if sticking
