INGREDIENTS

Cookie Bar Batter

  • 2 1 4 cups all purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 4 tsp ground cloves
  • 1 tsp baking soda
  • 1 2 tsp fine salt
  • 3 4 cup unsalted butter softened
  • 1 cup packed light brown sugar
  • 1 4 cup granulated sugar
  • 1 3 cup unsulfured molasses
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 tbsp milk.

Optional Vanilla Glaze

  • 1 cup powdered sugar
  • 1 2 tsp vanilla extract
  • 1 2 tbsp milk
  • pinch of salt.

INSTRUCTIONS

Bake Cookie Bars

  • heat oven to 350F and line a 9x13 inch pan with parchment and lightly grease
  • whisk flour ginger cinnamon cloves baking soda and salt
  • beat butter brown sugar and granulated sugar until fluffy then beat in molasses egg and vanilla
  • mix in dry ingredients just until combined and add milk to loosen if needed
  • spread batter evenly in pan and bake until set and a toothpick comes out with moist crumbs 20 to 25 minutes
  • cool completely in pan before glazing and slicing.

Glaze And Serve

  • whisk powdered sugar vanilla milk and salt until smooth and pourable
  • spread or drizzle glaze over cooled bars and let set 10 to 15 minutes
  • cut into 24 squares and store airtight.

Notes

1. Use dark molasses for deeper flavor but avoid blackstrap for a bitter edge. For extra chew underbake by 1 to 2 minutes and cool fully before cutting. Swap half the butter for vegetable oil for a softer bar. Add 1 2 cup raisins or chopped nuts if desired
