INGREDIENTS

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine salt.

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract.

Optional

  • 2 tbsp granulated sugar for rolling.

INSTRUCTIONS

Mix and Shape

  • Heat oven to 350 F and line baking sheets with parchment paper
  • whisk flour baking soda baking powder and salt until combined
  • beat butter peanut butter granulated sugar and brown sugar until light and fluffy
  • mix in egg and vanilla until smooth
  • add dry ingredients and mix just until no dry flour remains
  • scoop about 1 1/2 tbsp dough per cookie and roll into balls then roll in sugar if using
  • place dough balls 2 inches apart and flatten with a fork in a crisscross pattern.

Bake and Cool

  • Bake until edges look set and lightly golden and centers look slightly underdone about 9 to 11 minutes
  • cool on the sheet 5 minutes then transfer to a rack to cool completely.

Notes

1. Use creamy or crunchy peanut butter. Chill dough 20 to 30 minutes if dough is too soft or cookies spread too much. Do not overbake for tender centers. For thicker cookies use 2 tbsp dough balls and bake 1 to 2 minutes longer. Store airtight 4 to 5 days or freeze baked cookies up to 2 months
