Oreo Mud Pie

INGREDIENTS

Oreo Crust

  • 24 Oreo cookies
  • 5 tbsp unsalted butter melted
  • 1 pinch salt.

Ice Cream Filling

  • 1.5 qt chocolate ice cream softened
  • ½ cup hot fudge sauce plus more for drizzling
  • 1 tsp espresso powder optional
  • 1 tsp vanilla extract.

Topping

  • 1.5 cups heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 6 Oreo cookies crushed
  • chocolate shavings optional.

INSTRUCTIONS

Oreo Crust

  • heat oven to 350 F
  • crush Oreo cookies into fine crumbs
  • mix crumbs with melted butter and salt until evenly moistened
  • press firmly into a 9 inch pie dish on bottom and up sides
  • bake until set and fragrant
  • cool completely.

Fill And Freeze

  • spread softened chocolate ice cream into cooled crust and smooth the top
  • freeze until firm
  • warm hot fudge just until pourable then spread a thin layer over the frozen ice cream and return to freezer until set.

Whipped Topping And Serve

  • whip heavy cream with powdered sugar and vanilla to stiff peaks
  • spread or pipe whipped cream over the pie
  • garnish with crushed Oreos and optional chocolate shavings
  • freeze at least 4 hours or overnight for clean slices
  • let stand 5 to 10 minutes before slicing and drizzle with extra hot fudge if desired.

Notes

1. For no bake skip baking and freeze crust 20 minutes before filling 2. Use coffee ice cream or cookies and cream ice cream for a classic mud pie variation 3. Substitute 8 oz whipped topping for homemade whipped cream 4. Add chopped nuts or mini chocolate chips between layers for extra texture
