INGREDIENTS

Dough

  • 3.5 cups all purpose flour
  • 2.25 tsp active dry yeast
  • 1.25 cups warm water 110 F
  • 2 tbsp olive oil
  • 1 tbsp sugar or honey
  • 1.5 tsp fine salt
  • 1 tbsp dried Italian herb blend
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • ½ tsp black pepper.

Optional topping

  • 1 tbsp olive oil
  • 1 tsp dried herbs
  • flaky salt to taste.

INSTRUCTIONS

Mix and knead

  • combine warm water and sugar then sprinkle yeast and rest 5 to 10 minutes until foamy
  • whisk flour salt herbs garlic powder and pepper then add yeast mixture and olive oil and mix to a shaggy dough
  • knead 8 to 10 minutes until smooth and elastic adding a little flour only if sticky.

Rise shape and bake

  • place dough in lightly oiled bowl cover and rise 60 to 90 minutes until doubled
  • punch down shape into a loaf and place in greased 9x5 inch pan cover and rise 30 to 45 minutes until domed about 1 inch above rim
  • brush with olive oil and optional herbs and salt then bake at 375 F for 30 to 35 minutes until golden and internal temperature reaches 190 to 200 F
  • cool in pan 10 minutes then turn out and cool 30 minutes before slicing.

Notes

1. Use bread flour for a chewier crumb 2. Replace dried herbs with 3 tbsp mixed fresh chopped herbs 3. Add 0.5 cup grated parmesan for a cheesy version 4. For faster prep use instant yeast and skip proofing step 5. Store wrapped at room temperature 2 days or freeze sliced up to 2 months
