Smothered Chicken

INGREDIENTS

Chicken

  • 4 boneless skinless chicken thighs or breasts about 1.5 lb total
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ¼ tsp dried thyme
  • ½ cup all purpose flour.

Gravy

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 large yellow onion thinly sliced
  • 8 oz mushrooms sliced
  • 3 garlic cloves minced
  • 2 cups chicken broth
  • ½ cup whole milk or heavy cream
  • 1 tbsp Worcestershire sauce
  • salt to taste
  • black pepper to taste.

Finish

  • fresh parsley for garnish.

INSTRUCTIONS

Sear chicken

  • pat chicken dry then season with salt pepper garlic powder onion powder paprika and thyme
  • dredge lightly in flour and shake off excess
  • heat olive oil and 1 tbsp butter in a large skillet over medium high heat
  • sear chicken until golden 4 to 5 minutes per side then transfer to a plate.

Build gravy and smother

  • reduce heat to medium and add remaining 1 tbsp butter
  • cook onion and mushrooms until softened and browned 8 to 10 minutes then add garlic and cook 30 seconds
  • sprinkle in 2 tbsp of remaining flour from dredging and cook 1 minute while stirring
  • slowly whisk in chicken broth and scrape up browned bits then simmer until slightly thickened 3 to 5 minutes
  • stir in milk or cream and Worcestershire and season to taste
  • return chicken and any juices to the skillet and simmer covered until chicken reaches 165 F and gravy is thick 12 to 18 minutes
  • rest 5 minutes off heat then garnish with parsley and serve over mashed potatoes rice or biscuits.

Notes

1. Use bone in thighs and extend simmer time to 20 to 25 minutes 2. Swap mushrooms for bell pepper or omit for onion only gravy 3. For gluten free use a 1 to 1 flour blend and thicken with cornstarch slurry if needed 4. Make it spicier with cayenne or hot sauce 5. If gravy is too thick add broth if too thin simmer uncovered a few minutes
