Soft and Chewy Peanut Butter Cookie Bars

INGREDIENTS

Dry

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp fine salt.

Wet

  • 1 cup unsalted butter softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 cup creamy peanut butter
  • 2 large eggs room temperature
  • 2 tsp vanilla extract.

Mix ins and Topping

  • 1 cup semi sweet chocolate chips optional
  • flaky salt for topping optional.

INSTRUCTIONS

Prep

  • Heat oven to 350 F
  • line a 9 x 13 inch baking pan with parchment and lightly grease
  • whisk flour baking soda and salt until combined.

Mix and Bake

  • Cream butter brown sugar and granulated sugar until light and smooth
  • beat in peanut butter then eggs and vanilla until fully combined
  • mix in dry ingredients just until no dry streaks remain then fold in chocolate chips if using
  • press batter evenly into pan
  • bake until edges are set and lightly golden and center is just set 20 to 26 minutes.

Cool and Slice

  • Cool in pan 30 to 60 minutes for clean cuts
  • lift out using parchment and slice into bars.

Notes

1. Use creamy peanut butter for the most consistent texture. For extra chewy bars slightly underbake and cool completely before slicing. Substitute up to half the chocolate chips with peanut butter chips or chopped peanuts. To reduce sweetness omit chocolate chips and sprinkle flaky salt after baking
