Southern Chili Dog Topping

INGREDIENTS

Meat and Aromatics

  • 1 lb ground beef 80 20
  • 1 2 cup finely minced onion
  • 1 cup beef broth
  • 1 cup tomato sauce.

Seasonings and Sauces

  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tsp brown sugar optional
  • 1 2 tsp kosher salt
  • 1 4 tsp black pepper
  • 1 8 tsp cayenne optional
  • hot sauce to taste.

Thickener

  • 1 tbsp masa harina or fine cornmeal.

INSTRUCTIONS

Brown and Build Base

  • Cook ground beef in a saucepan over medium heat
  • breaking it into very fine crumbles
  • Add onion and cook until softened
  • Stir in chili powder
  • cumin
  • paprika
  • and garlic powder and cook briefly until fragrant.

Simmer and Finish

  • Stir in beef broth
  • tomato sauce
  • Worcestershire
  • mustard
  • sugar
  • salt
  • and pepper
  • Simmer uncovered on low heat until thick and spoonable
  • stirring often and mashing occasionally to keep the texture fine
  • Stir in masa harina or cornmeal and simmer until thickened
  • Adjust salt and heat with hot sauce and cayenne then rest 5 minutes before serving.

Notes

1. For a smoother topping use a potato masher while simmering. Add more broth 1 tbsp at a time if it gets too thick. Swap beef with ground turkey for a leaner version. Make ahead and refrigerate up to 4 days or freeze up to 3 months
