INGREDIENTS

Meat and aromatics

  • 1 lb ground beef 80 20
  • 1 cup yellow onion finely minced
  • 2 cloves garlic minced.

Sauce base

  • 1 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth.

Seasonings

  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tbsp brown sugar
  • 1 tsp kosher salt
  • ½ tsp black pepper.

INSTRUCTIONS

Brown and build flavor

  • add ground beef and onion to a saucepan over medium heat and cook while breaking beef very fine until no pink remains
  • drain excess fat if needed
  • stir in garlic and cook 30 seconds
  • stir in chili powder cumin paprika cayenne brown sugar salt and pepper and cook 1 minute.

Simmer and finish

  • stir in tomato sauce ketchup mustard Worcestershire and beef broth until smooth
  • bring to a gentle simmer then reduce to low and cook uncovered 30 to 40 minutes stirring often until thick and spoonable
  • add a splash of broth if too thick or simmer longer if too thin
  • taste and adjust salt heat and sweetness
  • rest 5 minutes before serving as a topping.

Notes

1. For extra fine texture mash with a spoon or briefly pulse with an immersion blender. Substitute ground turkey for a lighter version and add 1 tsp extra Worcestershire for depth. Make ahead up to 4 days refrigerated or freeze up to 3 months and rewarm with a little broth
