INGREDIENTS

Meat and aromatics

  • 1 lb ground beef 80 to 85 percent lean
  • 1 cup finely minced yellow onion
  • 2 cloves garlic minced.

Sauce and seasoning

  • 1 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper optional
  • 1 tbsp light brown sugar optional
  • 1.5 cups beef broth or water
  • 1 tsp kosher salt plus more to taste
  • ½ tsp black pepper.

INSTRUCTIONS

Brown and build flavor

  • cook ground beef and onion in a saucepan over medium heat breaking meat into very fine crumbles until no pink remains
  • drain excess fat if needed then add garlic and cook until fragrant.

Simmer and thicken

  • stir in tomato sauce ketchup mustard Worcestershire and all spices then add broth and bring to a gentle simmer
  • simmer uncovered stirring often and mashing crumbles smaller until very thick about 30 to 40 minutes
  • taste and adjust salt heat and sweetness then rest 5 minutes before serving over hot dogs.

Notes

1. For extra fine texture use a potato masher while simmering 2. Swap beef broth for water for a lighter flavor 3. Add a splash of apple cider vinegar for more tang 4. Refrigerate up to 4 days or freeze up to 3 months and rewarm with a little water
