Southwest Beef Breakfast Casserole

INGREDIENTS

Beef mixture

  • 1 lb ground beef
  • 1 small yellow onion diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 1 cup canned diced tomatoes with green chiles drained
  • 1 cup canned black beans rinsed and drained
  • 1 cup frozen corn thawed
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste.

Egg custard

  • 10 large eggs
  • 1 cup milk
  • 1 cup sour cream
  • 1 tsp kosher salt
  • ½ tsp ground cumin.

Casserole assembly

  • 4 cups frozen shredded hash browns thawed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • cooking spray or butter for greasing
  • sliced green onions for garnish
  • chopped cilantro for garnish
  • salsa for serving.

INSTRUCTIONS

Cook beef mixture

  • Preheat oven to 375 F and grease a 9x13 inch baking dish. Heat olive oil in a large skillet over medium high heat
  • add ground beef and cook until browned
  • then drain excess fat if needed. Add onion and bell pepper and cook until softened
  • stir in garlic and cook briefly
  • then mix in taco seasoning
  • diced tomatoes with green chiles
  • black beans
  • and corn and simmer 2 to 3 minutes
  • then season with salt and pepper.

Mix custard and assemble

  • In a large bowl whisk eggs
  • milk
  • sour cream
  • salt
  • and cumin until smooth. Spread hash browns evenly in the baking dish
  • top with the beef mixture
  • then sprinkle with cheddar and Monterey Jack. Pour egg mixture evenly over the top and gently press so liquid settles through.

Bake and serve

  • Bake until the center is set and the top is lightly browned
  • 35 to 40 minutes
  • then rest 10 minutes before slicing. Garnish with green onions and cilantro and serve with salsa.

Notes

1. Use breakfast sausage or turkey instead of beef; Swap hash browns for tater tots and add 5 to 10 minutes bake time; Make ahead by assembling 2. refrigerating up to 24 hours 3. then baking until set; For extra heat add jalapeno or hot salsa; Freeze baked portions up to 2 months and reheat until hot throughout
