Streusel Blueberry Quick Bread

INGREDIENTS

Streusel Topping

  • ½ cup all purpose flour
  • ⅓ cup light brown sugar packed
  • 1 tsp ground cinnamon
  • ¼ tsp fine salt
  • 4 tbsp unsalted butter cold cubed.

Quick Bread Batter

  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine salt
  • 1 cup buttermilk
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted and cooled
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest optional
  • 1.5 cups blueberries fresh or frozen
  • 1 tbsp all purpose flour for tossing blueberries.

Optional Glaze

  • ½ cup powdered sugar
  • 1 to 2 tbsp lemon juice or milk
  • pinch fine salt.

INSTRUCTIONS

Pan And Oven

  • set oven to 350 F
  • grease a 9x5 inch loaf pan and line with parchment leaving overhang
  • whisk streusel dry ingredients then cut in cold butter until crumbly and refrigerate.

Mix Batter

  • whisk flour baking powder baking soda and salt
  • in another bowl whisk sugar buttermilk eggs melted butter and vanilla plus lemon zest if using
  • fold wet into dry just until combined
  • toss blueberries with 1 tbsp flour then gently fold into batter.

Bake

  • spread batter into prepared pan
  • sprinkle streusel evenly over the top and lightly press it in
  • bake until a toothpick in the center comes out clean or with a few moist crumbs 55 to 70 minutes and tent with foil if topping browns too fast
  • cool in pan 15 minutes then lift out and cool completely before slicing.

Optional Glaze

  • whisk powdered sugar with lemon juice or milk and pinch of salt to a thick drizzle consistency
  • drizzle over cooled loaf and let set 10 minutes.

Notes

1. Use fresh or frozen blueberries but do not thaw frozen berries to reduce bleeding 2. toss berries in flour to help prevent sinking 3. avoid overmixing to keep the crumb tender 4. substitute plain yogurt plus a splash of milk for buttermilk 5. add 0.5 tsp almond extract for a bakery style flavor 6. store airtight up to 3 days or freeze slices up to 2 months
