Tart Lime Bars

Tangy tart lime bars with a buttery shortbread crust and smooth citrus custard filling

INGREDIENTS

Shortbread Crust

  • 2 cups all purpose flour
  • 1 half cup powdered sugar
  • 1 quarter tsp fine salt
  • 1 cup unsalted butter melted.

Lime Filling

  • 4 large eggs
  • 1 and 1 half cups granulated sugar
  • 2 tbsp all purpose flour
  • 1 tbsp lime zest
  • 3 quarter cup fresh lime juice
  • 1 quarter tsp fine salt.

Finish

  • powdered sugar for dusting
  • extra lime zest for garnish.

INSTRUCTIONS

Shortbread Crust

  • Heat oven to 350 F and line a 9 by 13 inch pan with parchment leaving overhang
  • mix flour powdered sugar and salt then stir in melted butter until evenly moistened and press firmly into the pan
  • bake until lightly golden at the edges and set in the center about 18 to 20 minutes.

Lime Filling and Bake

  • Whisk eggs and sugar until smooth then whisk in flour zest lime juice and salt until fully combined
  • pour filling over hot crust and bake until the center is just set with a slight jiggle about 18 to 22 minutes
  • cool to room temperature then chill at least 2 hours before slicing.

Serve

  • Lift out using parchment and cut into squares with a clean knife wiping between cuts
  • dust with powdered sugar and add lime zest if desired.

Notes

1. Use fresh lime juice for best flavor and set; For extra tartness increase zest to 2 tbsp; Swap key limes for regular limes using the same juice amount; Chill well before cutting for clean edges; Store covered in the refrigerator up to 5 days or freeze up to 2 months
