Tater Tot Sloppy Joe Bake

INGREDIENTS

Sloppy Joe Filling

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 8 oz tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 2 tbsp brown sugar
  • 1 tsp chili powder optional
  • 1 tsp salt
  • ½ tsp black pepper.

Topping

  • 32 oz frozen tater tots
  • 2 cups shredded cheddar cheese.

Optional Garnish

  • sliced green onions
  • chopped parsley.

INSTRUCTIONS

Make Filling

  • preheat oven to 400 F and lightly grease a 9x13 inch baking dish
  • heat olive oil in a large skillet over medium heat then cook ground beef and onion until browned and onion is soft
  • drain excess grease then stir in garlic and cook 30 seconds
  • add ketchup tomato sauce Worcestershire mustard brown sugar chili powder salt and pepper then simmer 5 minutes until thickened.

Assemble And Bake

  • spread sloppy joe mixture evenly in the baking dish
  • arrange frozen tater tots in a single even layer over the filling
  • bake 25 minutes until tots are golden and crisp
  • sprinkle cheddar evenly over the top and bake 5 to 10 minutes until melted
  • rest 5 minutes before serving and garnish if desired.

Notes

1. Use ground turkey or chicken instead of beef 2. swap cheddar for pepper jack or a cheese blend 3. add diced bell pepper or a drained can of corn to the filling 4. for extra crisp tots broil 1 to 2 minutes at the end watching closely 5. make ahead by prepping filling and assembling then bake when ready
