Tater Tot Sloppy Joe Bake

INGREDIENTS

Sloppy Joe Filling

  • 1 lb ground beef
  • 1 cup yellow onion diced
  • 2 tsp garlic minced
  • 1 cup bell pepper diced optional
  • 1 tbsp olive oil optional
  • 1 tbsp tomato paste
  • 1 cup tomato sauce
  • 1 2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1 tsp chili powder
  • 1 2 tsp smoked paprika optional
  • 1 2 cup water or beef broth
  • 1 tsp kosher salt
  • 1 2 tsp black pepper.

Topping

  • 2 cups cheddar cheese shredded
  • 32 oz frozen tater tots.

Optional Garnish

  • sliced green onions
  • fresh parsley.

INSTRUCTIONS

Make Filling

  • preheat oven to 400 F and lightly grease a 9x13 inch baking dish
  • heat a large skillet over medium high heat and cook ground beef until mostly browned then drain excess fat if needed
  • add onion and bell pepper and cook until softened then stir in garlic and tomato paste and cook briefly
  • stir in tomato sauce ketchup brown sugar Worcestershire mustard spices water or broth salt and pepper then simmer until thickened.

Assemble And Bake

  • spread sloppy joe mixture evenly in the baking dish and sprinkle cheddar cheese over the top
  • arrange frozen tater tots in an even layer over the cheese
  • bake until bubbling and tots are crisp and golden then rest briefly before serving and garnish if desired.

Notes

1. Use ground turkey or chicken for a lighter option. Swap in canned sloppy joe sauce if preferred and reduce added sugar. Add corn or black beans for extra bulk. For extra crisp tots bake on the upper rack or broil 1 to 2 minutes at the end
