Tempura Chicken Bites Bowl

INGREDIENTS

Chicken

  • 1 1/2 lb boneless skinless chicken thighs cut into 1 inch pieces
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper.

Tempura batter and frying

  • 1 cup all purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 large egg
  • 1 1/4 cups ice cold sparkling water
  • 4 cups neutral frying oil.

Bowl base and vegetables

  • 3 cups cooked jasmine rice or sushi rice
  • 2 cups shredded cabbage or coleslaw mix
  • 1 cup julienned carrots
  • 1 cup sliced cucumber
  • 2 green onions thinly sliced.

Sauce and garnish

  • 1/3 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • toasted sesame seeds for garnish
  • pickled ginger optional.

INSTRUCTIONS

Prep and cook rice

  • Cook rice according to package directions and keep warm
  • whisk sauce ingredients until smooth and refrigerate.

Marinate chicken and make batter

  • Toss chicken with soy sauce rice vinegar garlic powder salt and pepper and rest 10 minutes
  • heat oil in a deep pot to 350 F
  • whisk flour cornstarch baking powder and salt then lightly whisk in egg and ice cold sparkling water leaving small lumps.

Fry chicken

  • Working in batches dip chicken into batter letting excess drip off then fry 3 to 4 minutes until deeply golden and cooked through
  • transfer to a rack to drain and lightly season with salt to taste.

Assemble bowls

  • Divide rice among bowls then add cabbage carrots and cucumber
  • top with tempura chicken
  • drizzle with sweet spicy mayo and finish with green onions sesame seeds and optional pickled ginger.

Notes

1. Keep batter cold and mix minimally for a lighter crust; substitute chicken breast and reduce fry time slightly; bake or air fry battered chicken for a lighter option using a light oil spray; swap rice for cauliflower rice or noodles; add avocado edamame or steamed broccoli for extra toppings
