Triple Chocolate Brownies

INGREDIENTS

Batter

  • 1/2 cup unsalted butter
  • 6 oz semisweet chocolate chopped
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3 large eggs room temperature
  • 2 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp fine salt
  • 1 tsp espresso powder optional.

Mix ins and Topping

  • 3/4 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips or chunks
  • 1/3 cup white chocolate chips.

INSTRUCTIONS

Prep

  • heat oven to 350 F and line an 8x8 inch or 9x9 inch pan with parchment leaving overhang
  • lightly grease parchment.

Make batter

  • melt butter and chopped semisweet chocolate together until smooth then cool 5 minutes
  • whisk in granulated sugar and brown sugar until glossy
  • whisk in eggs one at a time until fully incorporated then whisk in vanilla
  • fold in flour cocoa powder salt and espresso powder until just combined and no dry streaks remain
  • fold in semisweet and milk chocolate chips reserving a small handful for the top.

Bake and cool

  • spread batter evenly in prepared pan and sprinkle reserved chips plus white chocolate chips on top
  • bake until edges are set and a toothpick inserted in the center comes out with moist crumbs not wet batter 25 to 35 minutes
  • cool completely in pan then lift out and slice.

Notes

1. For cleaner slices chill 30 to 60 minutes before cutting; do not overbake for fudgy brownies pull when center is slightly under set; swap chocolate chips for chopped chocolate or add 1/2 cup toasted nuts; use Dutch process cocoa for deeper flavor or natural cocoa for lighter color
