Turtle Cheesecake

INGREDIENTS

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter melted
  • 1/4 tsp fine salt.

Cheesecake Filling

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 tbsp all purpose flour
  • 1 cup sour cream room temperature
  • 1 tsp vanilla extract
  • 3 large eggs room temperature
  • 1/2 cup caramel sauce plus more for drizzling
  • 3/4 cup semi sweet chocolate chips
  • 3/4 cup chopped pecans.

Topping

  • 1/2 cup caramel sauce warmed
  • 4 oz semi sweet chocolate chopped or 1/2 cup chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup chopped pecans
  • flaky salt optional.

INSTRUCTIONS

Crust

  • Heat oven to 325 F and grease a 9 inch springform pan then wrap the outside with foil
  • mix crumbs cocoa sugar salt and butter until evenly moistened
  • press into the bottom and slightly up the sides then bake until set and fragrant and cool slightly.

Cheesecake Filling and Bake

  • Reduce oven to 300 F
  • beat cream cheese until smooth then mix in sugar and flour until combined
  • blend in sour cream and vanilla then add eggs one at a time mixing on low just until incorporated
  • fold in caramel chocolate chips and pecans then pour into crust and smooth the top
  • set pan in a roasting pan and add hot water halfway up the sides to create a water bath
  • bake until edges are set and center is slightly jiggly then turn off oven crack the door and cool in oven
  • remove and cool to room temperature then chill at least 6 hours.

Topping and Serve

  • Warm caramel and drizzle over chilled cheesecake
  • heat cream to steaming and pour over chocolate then rest and stir smooth to make ganache and drizzle over caramel
  • sprinkle pecans and optional flaky salt then slice with a warm clean knife.

Notes

1. Use room temperature ingredients to prevent lumps; avoid overmixing after adding eggs to reduce cracking; water bath or a pan of water on the lower rack helps even baking; swap graham crackers for chocolate cookie crumbs; store covered refrigerated up to 5 days or freeze slices up to 2 months
