Double Chocolate Blondies

Double Chocolate Blondies are my answer when I want a bar that’s fudgy like a brownie but has that chewy blondie feel. The cocoa batter makes them taste deeply chocolatey, and the chocolate chips make sure there are pockets of melted chocolate in every slice.

I like this version because it’s a one-bowl situation and it bakes up reliably in an 8×8 pan. The edges set nicely, the middle stays soft, and the flavor is straightforward: cocoa, brown sugar, and chocolate.

These are especially good for a cookie tray, a casual get-together, or when I need a quick bake-sale style bar that cuts clean after it cools. A little flaky salt on top is optional, but I usually do it.

Why You’ll Love This Recipe

Fast and Easy: One bowl, simple ingredients, and you’re in and out of the kitchen quickly.

So Chocolatey: Cocoa in the batter plus chocolate chips gives you a real double-chocolate bar, not just a hint of chocolate.

Fudgy Centers: These bake up with set edges and a soft middle, which is exactly what I want from a blondie-brownie hybrid.

Great for Sharing: An 8×8 pan makes neat little squares that travel well and don’t crumble all over the place.

Easy to Customize: Swap the chips, add nuts, or sprinkle flaky salt on top depending on who you’re baking for.

Ingredients You’ll Need

Batter

  • Unsalted butter: Melted butter keeps this recipe simple and gives the bars that dense, chewy texture. Let it cool slightly so it doesn’t scramble the eggs.
  • Light brown sugar: This is where the chewiness comes from. Dark brown sugar works too if that’s what you have, and it will taste a little deeper.
  • Eggs: Room temperature eggs mix in more smoothly, but I’ve used cold eggs plenty of times. Just whisk well until the batter looks glossy and even.
  • Vanilla extract: Don’t skip it. It keeps the chocolate from tasting flat.
  • All-purpose flour: I use regular flour here. Measure it normally (spoon and level if you tend to pack flour).

  • Unsweetened cocoa powder: Natural or Dutch-process both work. Dutch-process will taste a little darker and smoother.
  • Baking powder: Just enough lift so they don’t bake up heavy like a brick.
  • Fine salt: Salt makes the chocolate taste more like chocolate. If you’re using salted butter, you can pull the salt back a touch.
  • Milk or espresso (optional): A splash helps loosen the batter and gives a slightly deeper chocolate flavor. Espresso is great if you like that cocoa-forward taste.

Mix-ins and topping

  • Semisweet chocolate chips: Semisweet is my go-to here because it keeps the bars from getting too sweet. Mini chips work too, they just spread out more.
  • Chopped dark chocolate (optional): I like this for bigger melty pockets, especially if you want a more intense chocolate bite. Extra chips are fine if that’s easier.
  • Flaky salt (optional): A light sprinkle on top is nice, especially if you use darker chocolate. You don’t need much.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F. Line an 8×8-inch pan with parchment paper and lightly grease it.
  2. Whisk the butter and sugar: In a large bowl, whisk the melted butter and brown sugar until glossy and well combined.
  3. Add the eggs and vanilla: Whisk in the eggs and vanilla until the mixture is smooth and looks cohesive.
  4. Mix the dry ingredients: In a separate bowl, whisk the flour, cocoa powder, baking powder, and salt together until evenly mixed.
  5. Add the dry ingredients: Fold the dry mixture into the wet mixture just until you don’t see dry streaks. Stir in the milk or espresso here if you’re using it.
  6. Fold in the chocolate: Fold in the chocolate chips and the chopped dark chocolate (if using) until evenly distributed.
  7. Spread the batter: Spread the batter evenly in the pan. Sprinkle a few extra chips on top if you want.

  8. Bake: Bake for about 22 to 28 minutes, until the edges are set and a toothpick in the center comes out with moist crumbs (not wet batter).
  9. Cool: Cool in the pan for 30 to 60 minutes so the bars set up and slice cleanly, then lift out using the parchment and cut into squares.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use a metal pan if you can. You’ll get slightly firmer edges and a more even bake. Glass pans tend to bake a little slower and can make the middle feel softer.

Don’t overbake them. Pull the pan when the center still gives you moist crumbs on a toothpick. If you wait for the toothpick to come out clean, they’ll be drier than you want.

Fold just until you don’t see flour. Overmixing makes bars tougher. A few gentle folds is all it takes.

Spread the batter all the way to the corners. It’s a thick batter, so take a minute to level it out. An even layer helps the middle finish at the same time as the edges.

Add flaky salt only at the end. Sprinkle it right before baking so it stays on top. I keep it light so it doesn’t overpower the chocolate.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is classic with these. It’s especially nice if you add a little flaky salt on top.
  • Coffee or espresso: These go really well with coffee, especially if you used a splash of espresso in the batter. I like them with plain black coffee.
  • Ice cream: Serve a square with vanilla ice cream on the side for an easy dessert plate. A drizzle of chocolate sauce is optional, but honestly not needed.
  • Fresh berries: Strawberries or raspberries are nice if you want something lighter next to a rich bar. It also looks good on a platter.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store the blondies airtight at room temperature for up to 3 days. I usually keep them as a slab and slice as needed so the center stays softer.

If you like a warm bar, you can microwave a square for a few seconds to get the chips a little melty again. Don’t overdo it or they can turn a bit rubbery.

For longer storage, freeze up to 2 months. I like freezing individual squares so I can grab one at a time.

Thaw at room temperature for about 30 to 60 minutes, or thaw in the fridge overnight if you’re planning ahead. They’re still great cold, too.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

How do I know when double chocolate blondies are done?

Look for edges that are set and slightly puffed, while the center still looks a little soft. A toothpick in the middle should come out with moist crumbs, not wet batter.

If the toothpick comes out totally clean, they’re probably a bit past the fudgy stage.

Can I use Dutch-process cocoa powder?

Yes. Natural or Dutch-process cocoa both work in this recipe. Dutch-process tends to taste a little darker and smoother.

Can I swap the chocolate chips for milk chocolate or white chocolate?

You can. Milk chocolate will make the bars sweeter, and white chocolate will make them taste more like a chocolate-and-vanilla bar. I still like adding a pinch of flaky salt on top if you go with a sweeter chip.

Can I add nuts?

Yes, chopped walnuts or pecans are great here. I’d keep the pieces fairly small so they don’t make slicing messy.

Why did my blondies come out dry?

The most common reason is overbaking. They set as they cool, so it helps to pull them when the center is still giving you moist crumbs.
