Healthy Street Corn Pasta Salad is my go-to when I want something that eats like a real pasta salad, but still tastes fresh and bright. You get sweet corn with a little char, crunchy veggies, and that creamy elote-style vibe without it feeling heavy.

The dressing is chili-lime, a little smoky, and tangy in the best way. I really like using Greek yogurt here because it keeps the salad creamy, but it doesn’t hide the corn and cilantro.
