Key Lime Bars are my favorite way to get that classic key lime pie flavor in a format that’s easy to slice and actually simple to serve. You get a buttery graham crust, a tangy baked lime filling, and that clean chilled finish that makes you want another small piece.

The filling is creamy and bright, with a little vanilla in the background and plenty of lime aroma from the zest. I like these best when they’re chilled until really firm, because the texture turns into that neat, smooth bar that cuts cleanly.

  • Key lime juice: Bottled key lime juice is totally fine here, and it’s usually what I use. If you only have Persian limes, use that and add a little extra zest.
  • Key lime zest: This is where the lime smell really comes through. Zest it before you juice if you’re using fresh limes.
  • Vanilla extract: Just a little softens the sharpness and makes the filling taste more rounded.
  • Salt: A pinch is enough. It helps the sweetness and lime taste more balanced.

Recipe Instructions

  4. Whisk the filling: Whisk the sweetened condensed milk, egg yolks, key lime juice, key lime zest, vanilla, and a pinch of salt until smooth and slightly thickened, about 1 minute.
  5. Add the filling: Pour the filling over the warm crust and spread it into an even layer.
  6. Bake: Bake for 15 to 18 minutes, until the center is set with a slight jiggle.

  7. Cool and chill: Cool to room temperature, then refrigerate until fully chilled and firm, at least 3 hours.
  8. Slice and serve: Lift the bars out using the parchment overhang, slice into 16 bars, and garnish with whipped cream, extra zest, and/or powdered sugar if you like.

Recipe Tips & Tricks

Use parchment with a good overhang. These are much easier to lift out in one piece when you can grab the paper. It also keeps the edges neat.

Press the crust firmly. Really pack it down so it holds together when you slice. I use the bottom of a measuring cup to get it even.

Don’t overbake the filling. You want it just set with a slight jiggle in the center. If it puffs and starts to look dry, it’s gone a little too far.
