Lemon Cream Dessert

Lemon Cream Dessert is my kind of no-bake treat: a buttery graham crust with a fluffy lemon filling that sets up cold and slices clean. It’s creamy, bright, and just rich enough to feel like a real dessert.

The flavor is straight-up lemony and tangy in the best way, with that classic cream cheese softness underneath. I like this version because it stays light and mousse-like once you fold in whipped cream, instead of turning dense.

For me, it’s a go-to make-ahead dessert for warm-weather dinners, holidays, and potlucks where I don’t want to fuss with baking. It also travels well and looks nice with simple whipped cream and berries on top.

Why You’ll Love This Recipe

No-bake ease: No oven, no water bath, no stress. It’s all fridge time, which is especially nice in summer.

Bright lemon flavor: Fresh lemon juice and zest give it a clean citrus bite that keeps the sweetness in check.

Soft, fluffy filling: Folding in whipped cream makes the filling feel lighter and less “cheesecake heavy,” but it still slices well.

Make-ahead friendly: This is one of those desserts that’s actually better after a night in the fridge, so it’s perfect when you want to prep early.

Simple to serve: You can keep it plain, or dress it up with whipped cream, lemon slices, or berries depending on what you have.

Ingredients You’ll Need

Graham Cracker Crust

  • Graham cracker crumbs: I usually buy the box of crumbs for convenience, but crushed full crackers work fine too. You want them pretty fine so the crust holds together.

  • Granulated sugar: Just enough to lightly sweeten the crust. If your graham crackers are extra sweet, you can dial it back a little.
  • Unsalted butter: This is what makes the crust pressable and sliceable once it chills. Melt it fully so it mixes in evenly.
  • Salt: Don’t skip the pinch. It keeps the crust from tasting flat.

Lemon Cream Filling

  • Cream cheese: Use full-fat for the creamiest texture. Make sure it’s softened, or you’ll fight little lumps.
  • Sweetened condensed milk: This sweetens and helps the filling set without baking. I use regular, not fat-free.
  • Fresh lemon juice: Fresh is best here, and it’s what thickens the filling when it hits the dairy. Bottled works in a pinch, but the flavor isn’t quite the same.
  • Lemon zest: This is where a lot of the lemon flavor comes from, so I’m generous with it. Zest your lemons before juicing them.

  • Vanilla extract: Just a little rounds out the lemon and makes it taste more “dessert-y.”
  • Salt: Another small pinch helps keep the filling from tasting overly sweet.
  • Heavy cream: Cold cream whips up faster and holds better. This is what makes the filling airy instead of dense.

Optional Topping

  • Whipped cream: A simple dollop is enough, especially if you’re serving this after a big meal.
  • Lemon zest: A little sprinkle on top makes it look finished and adds extra lemon aroma.
  • Lemon slices: I like thin slices or little wedges for a clean, classic look.
  • Fresh berries: Strawberries, blueberries, raspberries—anything juicy and tart works well here.

Recipe Instructions

  1. Mix the crust: Stir the graham cracker crumbs, sugar, salt, and melted butter together until the mixture looks evenly moistened and holds together when pressed.
  2. Press the crust: Press the crust firmly into an 8-inch square dish or a 9-inch pie dish. Chill it in the refrigerator while you make the filling.
  3. Whip the cream: Whip the cold heavy cream to medium-stiff peaks, then refrigerate it so it stays firm while you mix the rest of the filling.
  4. Beat the cream cheese: Beat the softened cream cheese until smooth and creamy, scraping down the bowl as needed.
  5. Add the condensed milk: Beat in the sweetened condensed milk until the mixture looks glossy and well blended.
  6. Mix in the lemon: Add the lemon juice, lemon zest, vanilla, and salt, then mix until thickened and smooth.
  7. Fold in whipped cream: Fold the whipped cream into the lemon mixture until no streaks remain and the filling looks fluffy.

  8. Chill to set: Spread the filling evenly over the chilled crust, cover, and refrigerate until set, at least 4 hours or overnight.
  9. Slice and serve: Slice and serve cold, with whipped cream, extra zest, lemon slices, or berries if you like.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use softened cream cheese. If it’s even a little too cold, you’ll get small lumps that are hard to beat out. I usually let it sit at room temp until it’s easy to press with a finger.

Whip the cream to medium-stiff peaks. Too soft and the filling can end up looser than you want; too stiff and it can look a little grainy when folded in. Medium-stiff is the sweet spot.

Let the lemon juice do its thing. The filling will look thicker pretty quickly after you add the lemon juice. Mix just until smooth and thickened.

Press the crust firmly. I use the bottom of a measuring cup to really pack it in. A well-packed crust makes cleaner slices later.

Wipe the knife between cuts. It sounds fussy, but it’s what keeps the edges neat. A warm, damp paper towel works great for quick cleanups between slices.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Whipped cream: Add a small dollop on each piece right before serving. It makes the plate look nice and gives you a little extra creaminess.
  • Fresh berries: Strawberries and blueberries are my usual pick, either on top or on the side. The tart fruit works really well with the lemon.
  • Lemon zest or slices: A little zest on top makes the lemon flavor pop. Thin lemon slices look pretty, especially for a party tray.
  • Iced tea or coffee: This is really good with iced tea, especially if you like a lighter dessert after dinner. Coffee works too if you’re serving it later in the evening.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge. This dessert is meant to be served cold, so the refrigerator is the right place for it. Keep it covered so the top doesn’t dry out.

You can make this recipe ahead the day before and let it chill overnight. It slices the cleanest that way, and the texture sets up really nicely.

If you want to freeze it, freeze individual portions in an airtight container. Thaw in the fridge overnight before serving; the texture is a little softer after freezing but still very good.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use bottled lemon juice?

You can, and the dessert will still set, but fresh lemon juice tastes better here. If you do use bottled, I’d add a little extra zest to help the lemon flavor.

How long does it need to chill before slicing?

At least 4 hours, but overnight is even better. If you’re in a hurry, the center may be a little soft and the slices won’t look as clean.

Can I swap the homemade whipped cream for whipped topping?

Yes. You can replace the whipped heavy cream with an 8-ounce tub of whipped topping as a shortcut. The filling ends up a little sweeter and slightly less airy, but it works.

Why did my filling turn out runny?

Most of the time it’s from under-whipped cream or not enough chill time. It can also happen if the cream cheese mixture wasn’t thickened before folding in the whipped cream, so make sure it looks noticeably thicker after the lemon juice goes in.

Can I make this into lemon pie bars?

Yes—an 8-inch square dish is perfect for bar-style slices. Just chill it well and wipe the knife between cuts for neat squares.
