Moist Mayo Cupcakes

Moist Mayo Cupcakes are my go-to when I want a deep chocolate cupcake that stays soft for days. They have that cozy, classic cocoa flavor, but the texture is what really stands out.

The mayonnaise sounds odd until you taste them, and then it just makes sense. For me, it gives the cupcakes a tender crumb and a rich, moist bite without any fuss.

I make these when I need a dependable chocolate cupcake for parties, bake sales, or a simple weekend dessert. They’re great plain, but I also like them with a simple chocolate frosting when I want them to feel a little more finished.

Why You’ll Love This Recipe

Fast and easy: No mixer needed for the cupcakes, and the batter comes together in minutes.

Ultra moist: The mayonnaise makes the crumb really tender, and the cupcakes stay soft even the next day.

Big cocoa flavor: These taste like a classic chocolate cupcake, not “mystery ingredient” cupcakes.

No eggs to crack: This recipe is handy when you’re out of eggs, or just want an egg-free chocolate cupcake that still bakes up right.

Frosting is optional: They’re genuinely good plain, but they also hold up well to a thick swirl of chocolate frosting.

Ingredients You’ll Need

Cupcakes

  • All-purpose flour: I use regular flour here. It gives you a sturdy cupcake that still stays tender.

  • Granulated sugar: Plain white sugar is all you need. It keeps the chocolate flavor clean and familiar.
  • Unsweetened cocoa powder: Use the cocoa you like to bake with. Natural or Dutch-process both work, but Dutch-process will taste a little darker and smoother.
  • Baking soda: Don’t skip it. It helps the cupcakes rise and keeps the crumb light.
  • Baking powder: This gives a little extra lift so they bake up nicely domed.
  • Salt: Just a small amount makes the chocolate taste more like chocolate.
  • Water: Simple and reliable. If you want a stronger chocolate flavor, cooled coffee works really well here too.
  • Mayonnaise: Full-fat mayonnaise is the move for the best texture. You won’t taste “mayo,” but you will notice how moist the cupcakes are.

  • Vanilla extract: I like real vanilla extract here. It rounds out the cocoa flavor.

Optional Chocolate Frosting

  • Unsalted butter: Softened butter is easiest to beat smooth, especially if you’re making the frosting by hand or with a basic mixer.
  • Powdered sugar: This sweetens and thickens the frosting. Sift it if yours is lumpy.
  • Unsweetened cocoa powder: Use the same cocoa as the cupcakes for a consistent flavor.
  • Milk: This is just to loosen the frosting to a spreadable consistency. Add a little at a time.
  • Vanilla extract: A little vanilla keeps the frosting from tasting flat.
  • Salt: A pinch helps the chocolate pop and keeps the frosting from tasting too sugary.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F and line a 12-cup muffin pan with paper liners.
  2. Mix the dry ingredients: In a medium bowl, whisk the flour, sugar, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  3. Mix the wet ingredients: In a separate bowl, whisk the water, mayonnaise, and vanilla until smooth.
  4. Make the batter: Pour the wet ingredients into the dry ingredients and stir just until you don’t see dry flour.
  5. Fill the pan: Divide the batter evenly among the liners, filling each about 2/3 full.
  6. Bake: Bake for 18 to 22 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool: Let the cupcakes cool in the pan for about 5 minutes, then move them to a rack to cool completely.

  8. Make the frosting: Beat the butter until smooth, then add powdered sugar, cocoa, salt, vanilla, and milk and beat until fluffy. Add a little more milk if needed to make it easy to spread.
  9. Frost the cupcakes: Frost the cupcakes once they are completely cool.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use full-fat mayonnaise. Light mayo can work, but the cupcakes won’t be quite as rich and tender. Full-fat gives the best texture.

Don’t overmix once the flour is in. Stir just until you don’t see dry flour anymore. Overmixing can make chocolate cupcakes a little tough.

Try coffee instead of water. Cooled brewed coffee makes the chocolate taste deeper, and it doesn’t make the cupcakes taste like coffee.

Fill the liners about two-thirds full. That level gives you a nice rise without overflowing the pan.

Pull them when you see moist crumbs. A totally clean toothpick usually means they’re heading toward dry. A few moist crumbs is the sweet spot for these.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is classic with chocolate cupcakes. It’s especially nice if you frost them generously.
  • Coffee or espresso: These are great with coffee, especially if you use coffee in the batter. I like them with a latte or plain black coffee.
  • Fresh berries: Strawberries or raspberries are nice on the side if you want something fresh with the chocolate.
  • Ice cream: Serve a cupcake with a scoop of vanilla ice cream for an easy dessert plate. Add a drizzle of chocolate sauce if you want.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store the cupcakes airtight at room temperature for up to 3 days. If they’re frosted, I still keep them covered so the frosting doesn’t dry out.

You can freeze unfrosted cupcakes for up to 2 months. Let them cool completely first, then wrap and freeze.

Thaw at room temperature (still wrapped) so they don’t pick up condensation. Frost after thawing if you’re using frosting.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Do the cupcakes taste like mayonnaise?

No. The mayonnaise mostly affects the texture, not the flavor, and you won’t get a mayo taste in the finished cupcakes.

Can I use Miracle Whip instead of mayonnaise?

I wouldn’t. Miracle Whip is sweeter and more seasoned, and that can throw off the flavor of the cupcakes. Stick with regular, full-fat mayonnaise.

Can I replace the water with coffee?

Yes, and it’s one of my favorite swaps here. Use cooled brewed coffee in the same amount as the water.

How do I know when they’re done?

Start checking around 18 minutes. A toothpick in the center should come out with a few moist crumbs, not wet batter.

Can I make these without the frosting?

Definitely. They’re good plain, and they also work with a dusting of powdered sugar or a simple dollop of whipped cream if you want something light.
